Beef Short Ribs with Charred Pepper Cream Gnocchi

Everyone needs another gnocchi recipe in their life, and this braised beef short ribs with charred pepper cream gnocchi is the best I’ve ever had!

Ingredients

Ribs

  • 1/2 Cup Flour
  • Salt
  • Pepper
  • 2 lbs Beef Short Ribs
  • 2 Tablespoon Olive Oil
  • 1/2 Cup Beef Broth
  • 1/3 Cup White Cooking Wine, or 1/2 cup white wine
  • 1 Onion, quartered
  • 6 Cloves Garlic, peeled
  • 5 Sprigs Thyme, fresh

Sauce

  • 4 Yellow Bell Peppers
  • 2 Tablespoon Butter
  • 2 Cloves Garlic, minced
  • 1 Shallot, minced
  • 1/3 Cup White Cooking Wine, or 1/2 cup white wine
  • 1 1/2 Cups Heavy Cream
  • 1/2-3/4 teaspoon Salt
  • Gnocchi
  • Parmesan, shaved
  • Thyme, fresh

Instructions

For The Ribs

  1. Preheat the oven to 350°F (175°C).
  2. Season the flour with salt and pepper and dredge each short rib in the seasoned flour on all sides.
  3. Heat the olive oil in a pan over medium-high heat and brown each side of the ribs, including the ends, for about a minute per side. Remove ribs from the pan. Wipe out any excess blackened flour from the pan.
  4. Add the beef broth, white cooking wine, quartered onion, peeled garlic cloves, and fresh thyme sprigs to the pan and bring to a simmer. Return the browned short ribs to the pot and cover with a lid.
  5. Place the covered pot in the preheated oven for 2 to 2 1/2 hours, or until the meat is incredibly tender and falling off the bones.

For The Sauce

  1. Meanwhile, char the yellow bell peppers on each side until blistered and blackened. This can be done on a grill, in a hot pan, or directly over a gas burner. Immediately remove the charred peppers to a ziplock bag and seal it closed.
  2. Allow the peppers to steam in the bag for 30 minutes, then remove them and peel off the skin.
  3. Remove the tops and inner seeds from the peeled peppers, then chop them into quarters.
  4. Melt the butter in a skillet over medium heat.
  5. Add the minced garlic and shallots to the skillet and cook until fragrant, approximately 3 minutes.
  6. Stir in the white cooking wine and cook until the liquid has reduced by half, about 4 minutes.
  7. Add the heavy cream and chopped charred peppers to the skillet. Reduce the heat to medium-low and simmer for about 10 minutes.
  8. Remove the skillet from heat and let it rest for 3 minutes.
  9. Carefully pour the sauce mixture into a blender and blend until completely smooth.
  10. Pass the blended sauce through a fine mesh strainer, using a spatula to help push the sauce through. Work in small batches to ensure a silky smooth consistency. Transfer the strained sauce back to the skillet.
  11. Season the sauce with salt and pepper to taste, then heat gently over low heat until warm.
  12. Cook the gnocchi according to package directions until they float to the surface, then drain them. Add the cooked gnocchi directly to the charred pepper cream sauce and toss to coat thoroughly.
  13. Serve the creamy gnocchi on plates, topped with a tender braised beef short rib, a few shavings of fresh Parmesan, and a sprinkle of fresh thyme.
