  • Mix together the cake flour, granulated sugar, baking powder, and salt in a mixing bowl (or a stand mixer). Beat in the unsalted butter at low speed until no white streaks remain and the mixture looks crumbly, like wet sand.
  • Beat in about 2 cups of the milk/egg mixture for a minute and a half. Add the remaining liquid mixture and beat until fully incorporated, about a minute longer, scraping the sides and bottom as necessary.
