These juicy, flavorful chicken, peppers and onions fajitas are hands down the best fajitas I’ve ever had and it all starts with a marinade and a secret in the peppers.

Ingredients

Marinade

  • 1/3 Cup Orange Juice
  • Juice of 1 1/2 limes
  • 1/3 Cup Pineapple Juice
  • 3 Tablespoons Olive Oil or Canola Oil
  • 1 teaspoon Garlic Powder
  • 2 1/2 teaspoons Cumin
  • 2 teaspoons Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1/4 teaspoon Ground Coriander
  • 2 teaspoons Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1/3 Cup Chopped Cilantro
  • 4 Chicken Breasts, sliced

Peppers and Onions

  • 1 Red, Orange and Green Bell Peppers, one of each, three peppers total, cored, seeded and sliced
  • 1 Onion, sliced
  • 1 teaspoon Olive Oil, plus more if needed
  • 1 teaspoon Taco Seasoning, homemade
  • 1 Tablespoon Butter

Toppings

  • Flour Tortillas
  • Avocado, sliced
  • Sour cream
  • Cheese
  • Limes
  • Salsa

Instructions

Marinade & Assembly

  • In a plastic storage bag or baking dish, whisk together all of the marinade ingredients (orange juice, lime juice, pineapple juice, olive oil/canola oil, garlic powder, cumin, chili powder, smoked paprika, ground coriander, kosher salt, black pepper), adding the chopped cilantro at the end.
  • Set aside 1/4 cup of the marinade for later use.
  • Add the sliced chicken breasts to the bag with the remaining marinade, seal, and refrigerate for 30-90 minutes. Do not marinate longer than 90 minutes to prevent the chicken from toughening.
  • Meanwhile, prepare the peppers and onions as directed in the “Peppers and Onions” section below.
  • Once the peppers and onions are cooked, remove them to a plate and set aside.
  • Drain any excess marinade from the chicken. Heat the same skillet to medium-high heat with an additional drizzle of olive oil if needed. Add the marinated chicken and cook, turning occasionally, until cooked through and golden brown on all sides.
  • Return the reserved marinade and the cooked peppers and onions to the skillet. Stir everything together until all ingredients are thoroughly heated through and coated in the flavorful sauce.
  • Serve immediately with warm flour tortillas and your choice of toppings.

Peppers and Onions Preparation

  • In a cast iron skillet (we prefer this one from Lodge), over medium heat, add the butter and olive oil. Allow the butter to melt and the oil to shimmer.
  • Add the sliced bell peppers (red, orange, green) and sliced onion to the skillet, along with the taco seasoning.
  • Once the vegetables begin to cook and soften, reduce the heat to medium-low. While stirring occasionally, allow them to cook for about 20 minutes or until they are golden, tender-crisp, and caramelized to your liking.
  • Remove the cooked peppers and onions to a plate and set aside to await the cooked chicken.

Recipe Notes

This recipe makes a really great freezer meal! For uncooked storage, freeze the chicken and marinade in one freezer-safe bag, and the sliced peppers and onions in another for up to 3 weeks. Thaw in the fridge before cooking as directed. If you prefer fully cooked freezer meals, cook the fajitas, allow them to cool completely, and then freeze in airtight containers or vacuum-seal for up to 3 months.
