  • 1 Tablespoon Olive Oil
  • 2 Sweet Potatoes, peeled and chopped
  • 1 White Sweet Potato, peeled and chopped
  • Kosher Salt
  • Pepper
  • 1 Can Chickpeas, Garbanzo Beans, drained and rinsed
  • 1 Cup Sweet Peas

Sauce

  • 1 1/2 Tablespoons Butter
  • 3 Cloves Garlic, minced
  • 1 Jalapeno, seeded and minced
  • 2 teaspoons Ground Coriander
  • 1 teaspoon Cumin
  • 1 teaspoon Garam Masala
  • 1 teaspoon Smoked Paprika
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Kosher Salt
  • 1 Can Tomato Sauce, 14.5 ounce
  • 1/2 Cup Canned Coconut Milk
  • 3/4 Cup Heavy Cream
  • 1/4 Cup Cilantro, chopped

Instructions

  • Preheat your oven to 425 degrees Fahrenheit (220°C). This ensures the sweet potatoes roast perfectly, developing a lovely tenderness and slight caramelization.
