We have smoked chicken breasts, a whole chicken and chicken wings so it was high time we share our smoked chicken thighs recipe. Chicken thighs have the best flavor and we are ramping that flavor up in the Traeger!

Instructions

  • Before beginning, decide if you’d like to smoke the thighs directly on the smoker grates or in a pan (which is how I choose to do it). If cooking directly on the grill, you’ll need to reserve some of the marinade for serving later.
  • In a large resealable plastic bag, combine all the marinade ingredients: Honey, Soy Sauce, Allspice, Cayenne, Cinnamon, Ginger, Onion, Garlic, Dark Brown Sugar, and BBQ Rub. Seal the bag and squish to thoroughly combine the ingredients.
  • Open the bag and carefully add the 5-7 Chicken thighs. Ensure the chicken is well coated.
  • Allow the chicken to marinate in the refrigerator for 1-12 hours.
  • Preheat your Traeger smoker to 225°F (107°C) and let it come to temperature for 10 minutes.
  • If using a pan, pour the chicken and all the marinade into a disposable metal pan. Place the pan into the smoker and close the lid. Smoke the chicken for 10 minutes at this low temperature.
  • Increase the Traeger heat to 400°F (204°C) and cook for 15 minutes longer.
  • Flip the chicken thighs over and continue to cook for 10-15 minutes more, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer in the thickest part.
  • Remove the cooked chicken to a cutting board and tent loosely with foil. Let it rest for 5-10 minutes to lock in the juices.
  • Pour any remaining marinade from the pan (or use the reserved marinade if you smoked directly on grates) into a small saucepan and bring it to a boil on the stovetop.
  • In a small separate dish, stir the Water and Cornstarch together to create a slurry. Whisk this slurry into the boiling marinade and cook, stirring constantly, until the sauce thickens slightly.
  • Remove the sauce from the heat and serve immediately, brushing it over the rested chicken thighs.
