The bold and juicy flavor of **Smoked Brisket** is truly exceptional! Follow our perfect smoked brisket recipe for flawless results every time, making it an ideal, impressive main course for Easter or any special occasion.

Ingredients

  • 12 Pound Brisket
  • 2 Tablespoons Coarse Kosher Salt
  • 1 Tablespoon Freshly Cracked Black Pepper
  • 2 Tablespoons Dark Brown Sugar
  • 2 Tablespoons Smoked Paprika
  • 2 Tablespoons Granulated Garlic
  • 1/3 Cup Apple Cider, or Apple Juice

Instructions

  1. Prepare the Brisket: Carefully remove any silver skin or excess fat from the flat end of the brisket muscle. Trim down the large, crescent-shaped portion of fat. Also, trim any excessive or loose meat and fat from the point of the brisket. This careful trimming helps ensure even cooking and better texture.
  2. Shape and Season: Square the edges of the brisket to promote more uniform cooking. Flip the brisket over and trim the top fat cap to an approximate thickness of 1/4 inch. In a mixing bowl, combine the kosher salt, black pepper, dark brown sugar, smoked paprika, and granulated garlic to create your rub. Generously spread this rub evenly over the entire brisket, ensuring all surfaces are well-coated.
  3. Initial Smoking Phase: Preheat your smoker to 225℉ (107°C), utilizing the “super smoke” setting if available, and using your favorite wood chips for flavor. Carefully place the prepared brisket on the smoker grate, positioning the pointed end of the meat towards your main heat source. Close the lid and smoke the brisket until its internal temperature reaches 165℉ (74°C). This process typically takes about 8-9 hours, depending on your smoker and the brisket’s size.
  4. The Wrap: Once the brisket reaches 165℉, transfer it to a large, clean work surface. Roll out a substantial piece of peach butcher paper and center the brisket in the middle. Lightly spray the brisket with apple cider or apple juice to help maintain moisture. Carefully wrap the brisket tightly in the butcher paper. Return the wrapped brisket to the smoker, placing it seam-side down. This allows the weight of the brisket to crimp the edges of the paper wrap tightly, sealing in moisture and flavor.
  5. Final Smoking Phase: Close the smoker lid and continue to maintain a consistent temperature of 225℉ (107°C). Allow the brisket to smoke further until its internal temperature reaches 202℉ (94°C) in the thickest part of the meat. This crucial phase can take anywhere from 3-4 hours, so monitor the temperature closely for optimal tenderness.
  6. Resting is Key: Once the brisket reaches the target temperature, remove it from the smoker and immediately transfer it to a large cooler. Allow the brisket to rest for a minimum of 2 hours before slicing. This resting period is absolutely essential for redistribution of juices, resulting in an incredibly moist and tender brisket. Do not skip this step!

Recipe Notes

  • Fat Trimming Importance: Unlike pork, brisket fat does not render down and infuse the meat with moisture in the same way. Excessive fat can be awkward and unpleasurable to eat. Therefore, it is highly recommended to trim the fat carefully to about 1/4 inch thickness for the best eating experience.
  • Storage: Leftover smoked brisket can be stored in an airtight container in the refrigerator for up to 4 days. For longer storage, slice the brisket and freeze it in portions with some of its juices to prevent drying out.
  • Wood Choice: Experiment with different wood chips or chunks like oak, hickory, mesquite, or even applewood to find your preferred smoky flavor profile. Each wood imparts a distinct aroma and taste.
