Hello, fellow dessert enthusiasts! I’m Amanda, the passionate baker and creator behind A Cookie Named Desire, a blog dedicated to all things sweet and baked. My journey with Oh Sweet Basil began long before I launched my own blog, so when the opportunity arose to contribute here, I embraced it with absolute joy! For my debut recipe, I knew I had to share something truly special, a dessert that holds a significant place in my heart: cream puffs. The exact moment I first tasted a cream puff eludes me, but one thing remains undeniably true – their delicate charm is utterly irresistible. There’s something truly magical about that first bite, where the crisp exterior gives way to a cloud of creamy filling.
Blood oranges are, without a doubt, my favorite fruit. Have you seen my popular Blood Orange Chocolate Cupcakes? Each winter, I eagerly anticipate blood orange season, and my excitement always leads me to make a substantial batch of blood orange syrup. This ensures I can savor its unique flavor long after the season has passed. It was only natural, then, that this vibrant citrus had to be a star in this recipe. Infusing my classic pastry cream with homemade blood orange syrup creates a velvety, intensely flavored filling that is simply divine. And yes, I’m speaking from experience – I absolutely devoured the leftover pastry cream straight from the piping bag. It’s a testament to its incredible taste; once you try this blood orange pastry cream, you’ll completely understand why resisting temptation was futile.

These Blood Orange Cream Puffs with Chocolate Ganache evoke the comforting familiarity of a Boston cream pie, yet they elevate the experience to a sophisticated new level. Imagine the delightful interplay of creamy filling and rich chocolate, but instead of a dense cake, you get a delicate, ethereal puff. It’s a lighter, more refreshing dessert that offers a harmonious balance of flavors and textures, making it perfect for any occasion, from casual gatherings to elegant dinner parties.
At first glance, the ingredient list and directions might seem a bit daunting, leading you to think, “Oh no, this looks too complicated!” But fear not, aspiring bakers! I assure you that most of the ingredients are likely staples in your pantry, and many of them are used across multiple components of the recipe, streamlining the process more than you might imagine. What’s more, key elements like the blood orange syrup and the pastry cream can be prepared a day in advance. In fact, I highly recommend making them ahead of time. This not only breaks down the workload into manageable steps but also ensures that both the syrup and the pastry cream are perfectly chilled, resulting in an even lovelier, more stable, and utterly delicious cream puff. Planning ahead truly makes all the difference for a stress-free baking experience.

Unlocking the Secrets of Blood Oranges: Health & Flavor Profile
Beyond their captivating ruby-red hue, blood oranges offer a unique nutritional and sensory experience. Often compared to their more common navel counterparts, blood oranges stand out with distinctive characteristics that make them a fascinating fruit to explore.
Are Blood Oranges Healthier Than Navel Oranges?
When it comes to nutritional benefits, both blood oranges and navel oranges are powerhouses of essential vitamins and minerals, particularly vitamin C. While navel oranges typically boast slightly higher levels of vitamin C, blood oranges bring a unique set of health advantages to the table. Their distinctive crimson color is attributed to high concentrations of anthocyanins, potent antioxidants also found in other vibrantly colored fruits like blueberries and raspberries.
Anthocyanins are not just responsible for the stunning appearance of blood oranges; they are also linked to a range of significant health benefits. Research suggests that these natural antioxidants play a crucial role in reducing harmful cholesterol levels and lowering the risk of heart disease. Incorporating blood oranges into your diet can therefore be a delicious way to support your cardiovascular health and boost your overall well-being. So, while navel oranges might win on sheer vitamin C content, blood oranges offer a unique antioxidant profile that makes them an equally valuable, if not more specialized, choice for a healthy lifestyle.
Do Blood Oranges Taste Different Than Regular Oranges?
Absolutely! The flavor of blood oranges is distinctly different and more complex than that of a regular navel orange. While regular oranges offer a bright, straightforward citrus taste, blood oranges present a more intense and nuanced flavor profile. They are beautifully sweet, with a pronounced hint of raspberry or other red berries that adds a delightful depth and slight tartness. This unique combination creates a more aromatic and sophisticated citrus experience, making them a favorite among chefs and home cooks looking for something special. The undertones of berry complement their citrus base, allowing them to pair exceptionally well with ingredients like chocolate, vanilla, and various spices.
Mastering Cream Puff Storage: Can Homemade Cream Puffs Be Frozen?
Yes, homemade cream puffs can indeed be frozen, offering a fantastic make-ahead option for this elegant dessert. Proper storage is key to maintaining their delicate texture and fresh flavor.
Unfilled cream puff shells (pâte à choux) can be stored in an airtight container at room temperature for up to 2 days, or frozen for longer storage. To freeze them, arrange the baked and cooled shells in a single layer on a baking sheet and flash-freeze until solid. Once frozen, transfer them to a freezer-safe bag or airtight container, where they will keep for up to 3 months. When ready to use, simply thaw the shells at room temperature and then fill as desired.
For filled cream puffs, it’s best to freeze them without the ganache topping. Place the filled puffs on a baking sheet and flash-freeze. Once solid, transfer them to an airtight container. They will keep well in the freezer for up to 1 month. When you’re ready to serve, thaw the filled cream puffs in the refrigerator overnight, then top with fresh chocolate ganache before serving for the best possible experience. This flexibility makes cream puffs a wonderfully convenient dessert to prepare for future enjoyment.

- 1 Cup Blood Orange Juice
- 1/4 Cup Sugar
For the Pastry Cream
- 1 1/2 Cups Whole Milk
- 1/2 Cup Heavy Cream
- 1/3 Cup Sugar, divided
- 1/2 teaspoon Salt
- 1 Large Egg
- 2 Large Egg Yolks
- 1/4 Cup Cornstarch
- 4 Tablespoons Unsalted Butter
- 1 teaspoon Vanilla Extract
For the Pate Choux
- 3/4 Cups Water
- 6 Tablespoons Unsalted Butter
- 1/2 teaspoon Salt
- 3/4 Cups All-Purpose Flour
- 2 Tablespoons Sugar
- 3 Eggs
For the Ganache
- 4 Ounces Dark Chocolate
- 1/2 cup Heavy Cream
Instructions
- Stirring occasionally, heat the blood orange juice and sugar together on medium until the juice is reduced to about 1/2 cup.
- Remove from heat and allow to cool completely to room temperature.
- Once at room temperature, place in the refrigerator to chill for at least 1 hour.
- Heat the milk, heavy cream, half the sugar, and the salt together in a saucepan until it reaches a light boil.
- Stir frequently. Once at a boil, turn down the heat.
- In a separate bowl, mix together the egg yolks, egg, remaining sugar, and cornstarch until light in color.
- Whisk the egg mixture constantly as you slowly pour 1/3 of the hot milk into the eggs.
- Quickly begin whisking the remaining milk in your saucepan and slowly stir in the egg mixture.
- Put the saucepan on the stove on medium-low heat.
- Continue to stir until the mixture is thickened and smooth.
- Put the pastry cream through a fine mesh strainer over a bowl to remove any lumps.
- Stir in the butter and vanilla extract.
- Place plastic wrap directly on the pastry cream and place in the refrigerator to cool completely – at least 6 hours, preferably overnight.
- Once you are ready to use, stir in the blood orange syrup. Both the syrup and the pastry cream can be made a day ahead.
- Preheat the oven to 425 degrees F.
- Line a baking sheet with parchment paper.
- Heat the water and butter together in a saucepan over medium heat until the butter is melted and the mixture is steaming.
- Remove from heat.
- Mix in the salt, flour, and sugar and mix in well until the dough forms a ball.
- Allow to cool about 5 minutes, then beat in the eggs one at a time until combined. It may seem as though it will never happen, but keep mixing and it will eventually incorporate.
- Fill a piping bag with the pate choux and pipe out large rounds of the dough – about 1 1/2 inches in diameter at least 2 inches apart.
- Use a moistened finger to pat down any points in your dough.
- Bake for 20 minutes, turning halfway through.
- Allow to cool completely.
- Fill a piping bag fitted with a small round tip with the pastry cream.
- Use the piping tip to make a hole on the side or under the puff and fill with the pastry cream.
- Mix together the chocolate and the heavy cream and heat in a microwave at 50% power for 30 second intervals, mixing well between each interval. Once the chocolate is melted, mix well.
- Dip the tops of the cream puffs in the ganache and allow to dry on a wire rack.
- Serve immediately.
