These brown sugary, chewy Better for You Peach Oatmeal Bars are the perfect solution for hungry kids after school, and a mindful snack for adults too!

Ingredients

Oatmeal Bar Base

  • 1 Cup Old-Fashioned Rolled Oats
  • 1/2 Cup White Whole Wheat Flour
  • 1/4 Cup All-Purpose Flour
  • 1/3 Cup Light Brown Sugar
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Kosher Salt
  • 3 Tablespoons Unsalted Butter, melted
  • 3 Tablespoons Coconut Oil
  • 2 Cups Peaches, small-diced, skin on or off, divided
  • 1 1/2 teaspoons Cornstarch
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Granulated Sugar, divided
  • 8 Ounce Milk, for serving (optional but recommended)

GLAZE

  • 1/4 Cup Powdered Sugar
  • 2 teaspoons Milk, 1% or 2% is best

Instructions

  1. Preheat the oven to 375 degrees F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine the oats, white whole wheat flour, all-purpose flour, light brown sugar, cinnamon, and kosher salt. Pour in the melted unsalted butter and coconut oil, then stir until the dry ingredients are evenly moistened and form a crumbly mixture.
  3. Set aside 1/2 cup of this crumb mixture. Press the remaining mixture into an even layer in the bottom of the prepared baking pan to form the crust.
  4. Scatter half of the diced peaches evenly over the oat crust. Sprinkle the cornstarch evenly over the peaches. Next, sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Distribute the remaining peaches over this layer, followed by the remaining 1/2 tablespoon of granulated sugar. Finally, sprinkle the reserved crumb mixture evenly over the top. It’s okay if some fruit shows through.
  5. Bake the bars for 35 to 40 minutes, or until the fruit filling is bubbly and the crumb topping is beautifully golden brown and smells toasty. Place the pan on a wire rack to cool completely. For quicker setting and cleaner slices, you can speed this process along by transferring the pan to the refrigerator once it’s cooled slightly on the counter.
  6. While the bars are cooling, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar and milk until smooth and lump-free. For a thinner glaze, feel free to add a tiny bit more milk, a few drops at a time, until your desired consistency is reached. Once the bars are completely cool, use the parchment paper handles to lift them from the pan. Drizzle the glaze generously over the bars, then slice and serve.
