Alternatively, you can bake individual frozen dough balls directly from the freezer, adding a few extra minutes to the baking time.

The Best Soft Gingerbread Cookies

We’ve had our blog for over 10 years and this is the first time we’ve posted our recipe for the BEST soft gingerbread cookies ever!

Ingredients

For the Soft Gingerbread Cookies:

  • 3 1/2 Cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 1/2 teaspoons Ground Ginger
  • 1 Tablespoon Cinnamon
  • 1/2 teaspoon Allspice
  • 1/2 teaspoon Ground Cloves
  • 10 Tablespoons Unsalted Butter, softened (1 stick plus 2 tablespoons)
  • 3/4 Cup Light Brown Sugar, (dark works for even more flavor)
  • 2/3 Cup Molasses*
  • 1 Large Egg, at room temperature
  • 3/4 teaspoon Vanilla Extract

For the Royal Icing:

  • 1 1/2 Cups Powdered Sugar
  • 2-3 Tablespoons Water, Room Temp
  • 1/2 teaspoon Vanilla
  • 1 teaspoon Corn Syrup, Light

Instructions

  1. In a medium bowl, combine the flour, baking soda, salt, ground ginger, cinnamon, allspice, and ground cloves. Whisk them together thoroughly until all ingredients are completely combined.
  2. In a large bowl, using a stand mixer fitted with a paddle attachment (or a hand mixer), beat the softened unsalted butter and light brown sugar together for 3 minutes on medium-high speed. The mixture should become light, fluffy, and pale.
  3. Scrape down the sides and bottom of the bowl with a spatula to ensure everything is incorporated.
  4. Add the molasses to the butter and sugar mixture. Beat on medium-high speed until combined and the mixture looks creamy and uniform.
  5. Next, beat in the room-temperature egg and vanilla extract. Scrape down the sides of the bowl once more to ensure thorough mixing.
  6. Gradually add the whisked dry ingredients (from step 1) to the wet ingredients in the bowl. Mix on low speed, slowly, until all ingredients are just combined and a dough forms. Be careful not to overmix, as this can develop the gluten and result in tougher cookies.
  7. Divide the gingerbread cookie dough in half. Place each half onto a large piece of plastic wrap. Wrap each dough portion tightly and gently pat it down to create a flat disc shape.
  8. Chill the dough discs in the refrigerator for at least 3 hours. For best results and easier handling, you can chill them for up to 3 days. This chilling step is mandatory for gingerbread cookie dough to prevent spreading and maintain sharp shapes during baking.
  9. Once ready to bake, preheat your oven to 350°F (175°C).
  10. Line 2-3 large baking sheets with parchment paper or silicone baking mats. (We highly recommend silicone baking mats for cookies as they prevent sticking and ensure even baking.)
  11. Remove one disc of chilled cookie dough from the refrigerator.
  12. Generously sprinkle your work surface, as well as your hands and the rolling pin, with powdered sugar (not flour, as flour can toughen the cookies).
  13. Roll out the dough disc until it is 1/4 to 1/2-inch thick. Using your favorite cookie cutters, cut the dough into desired shapes. Carefully place the cut-out shapes about 1 inch apart on your prepared baking sheets. Gather and re-roll any dough scraps until all the dough is shaped. Repeat this process with the second disc of dough.
  14. Bake the cookies for approximately 9-10 minutes. The cookies should be set around the edges but still appear slightly soft in the center. Avoid overbaking to keep them soft and chewy.
  15. Allow the baked cookies to cool for 5 minutes on the baking sheet before carefully transferring them to a wire rack to cool completely. Once completely cool, they are ready to be decorated with royal icing!

For the Royal Icing:

  1. In a large bowl, mix together the powdered sugar, water, vanilla extract, and light corn syrup. Stir until the mixture is completely smooth and free of lumps.
  2. Test the consistency: when you lift your spoon or whisk, the icing should ribbon down onto the surface of the remaining icing, holding its shape for a few seconds (about 5-10 seconds) before melting back into the rest. If it’s too thick and doesn’t melt back, add water a tiny drop at a time. If it’s too thin and melts back instantly, add a little more powdered sugar, a teaspoon at a time, until the desired consistency is achieved.
  3. Transfer the icing to a small pastry bag fitted with a very small tip for decorating. Keep any unused icing covered with a damp cloth or plastic wrap pressed directly onto the surface to prevent it from hardening.

*For the best flavor and texture, we’ve consistently had the best luck with Grandma’s brand of unsulphured molasses.

Baked and undecorated cookies can be frozen in an airtight container for up to 3 months.
