Easy Brown Sugar Peach Crumble Pie Bars with a flaky crust, fresh peach filling, and buttery brown sugar topping. A no-fuss summer dessert favorite!

Ingredients

For the Crust

  • 1 Double Crust [Mom’s Magic Pie Crust Recipe]

For the Peach Filling

  • 7 Cups Peach Chunks, about 7 peaches, peeled or unpeeled is fine*
  • ¾ Cup Brown Sugar
  • ¼ Cup Cornaby’s Ultra Gel *see note
  • 1 teaspoon Lemon Juice
  • ½ teaspoon Cinnamon

For the Topping

  • ½ Cup Brown Sugar
  • 1 teaspoon Cinnamon
  • ¾ Cup All-Purpose Flour
  • Pinch Salt
  • Cup Unsalted Butter, cold and chopped into pieces

Instructions

Crust Preparation

  1. Prepare our crust recipe, rolling it out and laying it into a 9×13-inch baking pan.
  2. Trim off any edges that hang over the pan. Reserve those for cinnamon sugar pie cookies.
  3. Preheat oven to 400°F (200°C).

Filling and Assembly

  1. Peel the peaches (if desired) then cut them into 2-inch chunks. You’ll need 7 cups.
  2. In a large bowl, stir together the peach chunks, brown sugar, Ultra Gel, lemon juice, and cinnamon together until thoroughly combined.
  3. Set aside while you prepare the topping.
  4. In another bowl, using a pastry cutter or two forks, mix together the topping ingredients: brown sugar, cinnamon, flour, salt, and cold, chopped butter. Work it until it’s like wet sand and clumps together when you squeeze it in your hand.
  5. Pour the peach mixture evenly into the prepared crust.
  6. Top with the crumble topping. I like to squeeze it in my hand as I sprinkle it over the fruit so that it cooks in clumps.

Baking and Cooling

  1. Bake for 35-45 minutes or until the topping is browned, fruit is bubbly, and the crust is golden.
  2. Place on the counter to cool for 30 minutes then finish cooling in the fridge for at least 3 hours before slicing.

Recipe Notes

  • Cornaby’s Ultra Gel keeps the peach filling thick without tasting starchy. You can sub cornstarch in a pinch, but trust us – Ultra Gel is worth tracking down for the best results.
  • Storage (Baked): Cover and store at room temperature for up to 2 days, or refrigerate for up to 5 days. Chilling helps the crumble stay crisp and the filling set beautifully.
  • Freezing (Baked): Wrap slices individually (a foodsaver works great!) and freeze for up to 1 month. The topping may soften a bit after thawing. Alternatively, bake in a foil tin, cool completely, wrap well in plastic wrap and then foil, and freeze for a few months. Allow to defrost in the refrigerator before serving.
  • Freezing (Unbaked): Assemble the crust and filling, but skip the crumble. Freeze the pan wrapped tightly. Add crumble topping just before baking. Bake from frozen at 425°F (220°C) for 45 minutes, then reduce oven to 350°F (175°C) for 30 more minutes.
