I can hardly believe I’m sharing a recipe featuring mustard and pickles, two ingredients I typically don’t favor. But this Cuban Pasta Salad is simply incredible! It’s brimming with tender pork tenderloin, savory ham, creamy Swiss cheese, and fresh vegetables. And the dressing? It’s wonderfully tangy and packed with authentic Cuban flavors! Get ready for a taste sensation!

Ingredients

For the Pork Tenderloin

  • 1 1/4 Pounds Pork Tenderloin
  • 1 teaspoon Dry Ground Mustard
  • 1 1/2 teaspoons Dried Oregano
  • 1 1/2 teaspoons Cumin
  • 1 teaspoon Salt
  • Juice of 1 Orange
  • Juice of 1 Lemon

For the Pasta Salad

  • 20 oz. Orecchiette Pasta
  • 1 1/2 Cups Cubed Ham *see note
  • 2 Cups Cubed Swiss Cheese
  • 1 1/2 Pints Halved Cherry Tomatoes
  • 1 Cup Chopped Dill Pickles
  • 1/2 Cup Thinly Sliced Red Onion
  • 3 Cups Chopped, Packed Romaine Lettuce
  • 1/4-1/3 Cup Chopped Cilantro

For the Dressing

  • 1 1/3 Cup Canola oil
  • 2 teaspoons Garlic Powder
  • Zest of 2 Oranges
  • Juice of 2 Oranges
  • Zest of 2 Limes
  • Juice of 2 Limes
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 Tablespoon Apple Cider Vinegar, plus 1 Teaspoon
  • 1 teaspoon Sugar
  • 4 teaspoons Mayonnaise
  • 2 1/2 teaspoons Dijon or regular Mustard

Instructions

For the Pork Tenderloin

  1. You have two options for preparing the pork tenderloin – Instant Pot or oven. For the Instant Pot, sprinkle all of the seasonings (dry ground mustard, oregano, cumin, salt) over the pork tenderloin.
  2. Squeeze the orange and lemon juice into the Instant Pot and place the seasoned pork tenderloin in.
  3. Turn the valve to seal and close the lid. Set the time to 10 minutes at high pressure. Allow a natural release and then carefully remove the pork.
  4. Ensure the pork rests for 8 minutes before slicing it into 1-inch cubes.
  5. Drizzle oil in a pan over medium-high heat and crisp the pork cubes, scraping up any brown bits in the pan. Transfer everything to a plate to cool. The crispy pieces and brown bits in the pan are essential for flavor, do not discard them!
  6. For the oven method, preheat to 400°F (200°C) and prepare the pork tenderloin with seasonings and citrus juices as above. Bake for 18-20 minutes, then proceed with resting and crisping as described in the previous steps.

For the Pasta Salad

  1. Heat a large pot of water over medium-high heat, adding several pinches of salt to season the pasta thoroughly. Cook the orecchiette pasta just a little past al dente – this is crucial for pasta salad, ensuring it’s not overcooked but also not too firm once chilled.
  2. Drain the pasta and rinse it thoroughly in cold water to stop the cooking process and cool it down. Set aside.
  3. Prepare all other ingredients: cube the ham and Swiss cheese, halve the cherry tomatoes, chop the dill pickles, thinly slice the red onion, and chop the romaine lettuce and cilantro. Add the pasta and all prepared ingredients (except lettuce and cilantro, if making ahead) to a large bowl.
  4. Add the dressing to the bowl and toss gently to coat all ingredients evenly. If making ahead, add lettuce and cilantro just before serving.
  5. Serve immediately, or chill for enhanced flavor.

For the Dressing

  1. In a glass measuring cup or small bowl, whisk together all dressing ingredients (canola oil, garlic powder, orange zest, orange juice, lime zest, lime juice, dried oregano, ground cumin, salt, onion powder, smoked paprika, apple cider vinegar, sugar, mayonnaise, Dijon/regular mustard) until thoroughly combined and smooth.

Recipe Notes

  • This recipe is easily halved if you are preparing it for a smaller family gathering.
  • For convenience, we often use a 12-ounce ham steak from the meat department, which can be easily cubed.
  • This salad can be stored in an airtight container in the refrigerator for up to 5 days. For best results when making ahead, add fresh romaine lettuce and cilantro just before serving.
