Smothered BBQ Beef Burritos

A happy accident when one recipe turned into the most delicious Slow Cooker or Instant Pot Smothered BBQ Beef Burritos! The creamy salsa verde sauce is amazing!

Ingredients

  • 1 Beef Chuck Roast, 5-7 pounds
  • [Homemade BBQ Rub]
  • 1/4 Cup Apple Cider Vinegar
  • 1 Cup Beef Broth
  • [1-2 Cups Homemade BBQ Sauce]
  • 16 oz. Herdez Salsa Verde
  • 1 Cup Heavy Cream, or to taste
  • 3 Cups Colby Jack Cheese, shredded
  • 12 Tortillas
  • Sour Cream for Serving

Instructions

For the Instant Pot

  1. Rub the beef all over with the rub.
  2. Place the beef in the Instant Pot with the vinegar and broth. Set to manual, high pressure for 70 minutes. Once finished, allow for a slow release of pressure for 10-15 minutes.
  3. Remove the meat to a pan or cutting board and shred the meat using two forks.
  4. Place the shredded meat and 1-2 cups of BBQ sauce in the Instant Pot and stir to coat. Keep warm with the lid on while preparing other ingredients.

For the Slow Cooker

  1. Prepare the beef as stated above (rub with seasoning). Place in a slow cooker with the vinegar and broth on low for 8 hours. This extended cooking time ensures incredibly moist and tender beef.
  2. Remove the roast, shred the meat, and place it back in the slow cooker with 1-2 cups of BBQ sauce, stirring to coat. Keep warm.

For the Creamy Salsa Verde Sauce

  1. In a blender, pulse together the 16 oz. Herdez Salsa Verde and 1 cup of heavy cream until smooth and creamy.

To Assemble the Burritos
