- 1 Pound Stew Meat, cubed
- 1/3 Cup Butter
- 1 Onion, chopped
- 5 Carrots, peeled & chopped (large slices)
- 2 Stalks of Celery, halved lengthwise and diced
- 3/4 Cup Baby Bella Mushrooms, diced
- 1/3 Cup Flour
- 1 1/2 Cup Heavy Cream
- 1/2 Cup Milk, *see note*
- 2 Potatoes, chopped (we leave the peels on)
- 1 Can Tomato Sauce, 8oz
- 1 Package Dry Onion Soup Mix
- 2 teaspoons Basil
- 1 1/2 Cups Chicken or Vegetable Broth
The Quick Way With Canned Soup
- 1 Pound Stew Meat, cubed
- 5 Carrots, peeled & chopped (large slices)
- 2 Potatoes, chopped (we leave the peels on)
- 1 Can Cream of Celery Soup
- 1 Can Cream of Mushroom Soup
- 1 Can Tomato Sauce, 8oz
- 1 Package Dry Onion Soup Mix
- 2 teaspoons Dry Basil
- 1 Cup Water

Instructions
- This recipe can be made in the oven or slow cooker.
For the From Scratch Recipe
- In a large Dutch oven or stock pot over medium-high heat, add the 1 Pound Stew Meat.
- Cook, stirring occasionally for about 2 minutes or until the meat is browned on all sides. There is no need to cook it through completely at this stage.
- Remove the browned meat to a plate and return the pot to the burner over medium heat.
- Add the 1/3 Cup Butter, and as it melts, quickly add the 1 Onion, 5 Carrots, 2 Stalks of Celery, and 3/4 Cup Baby Bella Mushrooms.
- Stir to combine and cook for 2-3 minutes, or until the onions begin to turn translucent and vegetables soften slightly.
- Using a wooden spoon, quickly stir in the 1/3 Cup Flour and cook for 30 seconds, stirring constantly.
- Add the 1 1/2 Cup Heavy Cream and 1/2 Cup Milk (*see note below) and stir well to combine, scraping up any browned bits from the bottom of the pot.
- Allow the mixture to cook for about 1-3 minutes or until it thickens.
- Stir in the 2 Potatoes, 1 Can Tomato Sauce (8oz), 1 Package Dry Onion Soup Mix, 2 teaspoons Basil, and 1 1/2 Cups Chicken or Vegetable Broth.
- Transfer the entire mixture to a slow cooker and cook on low for 6-8 hours (we prefer 8 hours for extremely tender, fall-apart meat). Alternatively, place it in a covered oven-safe dish and bake in the oven at 250 degrees Fahrenheit (120°C) for 6-8 hours.
For the Quick Version
- In a large stock pot over medium-high heat, brown the 1 Pound Stew Meat on all sides, about 2-3 minutes.
- Add the 5 Carrots and 2 Potatoes and allow them to cook with the meat for 1 minute more, stirring.
- Stir in all the remaining ingredients: 1 Can Cream of Celery Soup, 1 Can Cream of Mushroom Soup, 1 Can Tomato Sauce (8oz), 1 Package Dry Onion Soup Mix, 2 teaspoons Dry Basil, and 1 Cup Water.
- Transfer the mixture to a slow cooker and cook on low for 6-8 hours (we still prefer 8 hours for best results). Alternatively, place in a covered oven-safe dish and bake in a 250 degree Fahrenheit (120°C) oven for 6-8 hours.
Recipe Notes
This recipe can easily use regular milk instead of heavy cream and water instead of broth, if preferred, without significantly altering the final outcome.
