Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- In a large Dutch oven or heavy-bottomed pot, heat the olive oil and butter over medium heat until the butter is shimmering and melted, but not smoking.
- Add the finely chopped onion and cook, stirring occasionally, for about 2 minutes until it begins to soften.
- Stir in the minced garlic and cook until fragrant, approximately 2 minutes, being careful not to burn it.
- Increase the heat to medium-high. Add the ground beef, Italian sausage, 2 teaspoons of salt, and 2 teaspoons of fresh ground black pepper. Cook, breaking the meat into small pieces with a wooden spoon, until it has lost its raw pink color but has not yet browned, about 4 minutes.

- Repeat the layering process: noodles, ricotta mixture, mozzarella, sweet cheddar, and meat sauce. Continue these layers until you run out of ingredients, ensuring your final layer is topped with the remaining 1 cup of mozzarella cheese, a sprinkle of the extra 1/4 cup of Parmesan cheese, and any remaining sweet cheddar.
- Lightly spray one side of a sheet of aluminum foil with nonstick cooking spray. Place the foil, sprayed side down, over the assembled lasagna, ensuring it covers the dish tightly.
- Bake the lasagna in the preheated oven for 15 minutes. After 15 minutes, carefully remove the foil and continue to bake for another 25-35 minutes, or until the cheese topping is bubbly, melted, and beautifully golden brown with some spotty brown edges.
