Instructions
For the Pesto
- Heat a dry skillet over medium heat. Add the walnuts and garlic (with skin on). Toast for a few minutes until walnuts are lightly golden and fragrant, and garlic skins are slightly charred, shaking the pan occasionally for even toasting.
- Remove walnuts and garlic from the pan and allow them to cool completely. Once cool, peel the skin from the garlic cloves.
- In a blender or food processor, combine the cooled toasted walnuts, peeled garlic, fresh basil, 1/4 cup extra virgin olive oil, lemon zest, and lemon juice. Pulse until the mixture is mostly smooth but still retains a slightly grainy texture.
- Transfer the pesto to a small bowl. Stir in 1/4 cup Parmesan cheese until well combined. Taste and season with salt as needed. Set aside.
For the Tarts
- Preheat your oven to 400°F (200°C).
- Lightly flour a clean counter surface and unroll the thawed puff pastry sheets.
- Using a 2.5-3 inch biscuit cutter or a large glass, cut the dough into uniform circles.
- Gently press each pastry circle into the wells of a mini muffin pan. Using a fork, poke holes all over the inside bottom of each puff pastry shell to prevent excessive puffing.
- Bake the empty pastry shells for about 10 minutes, or until lightly golden. Remove from the oven.
- While the pastry is still warm, use a small spoon or tart press (or your fingers, carefully) to gently push down the center of each puffed pastry, creating a shallow well.
- Fill each pastry well with approximately 1 teaspoon of the prepared pesto.
- Top each pesto-filled cup with a halved grape tomato and a small cube of mozzarella cheese.
- Return the filled tarts to the oven and bake for another 5 minutes, or until the mozzarella is melted and bubbly, and the pastry edges are golden.
- Remove from the oven. If desired, sprinkle with a pinch of freshly cracked black pepper and drizzle with balsamic glaze.
- Serve immediately while warm, or at room temperature.
Recipe Notes
These tarts can be assembled hours before baking. Store them, covered with plastic wrap, in the refrigerator until you’re ready to bake and serve. Simply add a few extra minutes to the baking time if baking directly from the fridge.
