Cookies and Cream Frozen Custard

Indulge in the creamiest homemade Cookies and Cream Frozen Custard, a perfect blend of rich vanilla and crunchy Oreo pieces, from Oh Sweet Basil.

There’s nothing quite like the simple pleasure of a truly decadent dessert, especially after a long week. For many of us, that comfort comes in the form of something wonderfully sweet and utterly creamy. My wife, Carrian, and I, have our own particular indulgences. While she often craves the salty crispness of hot French fries (especially JCW’s famous ones!), my heart has always belonged to the world of thick shakes and velvety ice cream. The sheer bliss of settling down with a spoonful of rich, cold goodness is unparalleled.

We used to have a favorite local spot for these treats, but honestly, that’s changed. Why? Because Carrian has perfected the art of homemade frozen custard, and her **Cookies and Cream Frozen Custard Ice Cream** is now my absolute favorite. It’s a game-changer, delivering a luxurious experience that surpasses anything you can buy, making those late-night movie dates even sweeter.

And I’m not just saying that because she’s my amazing wife; it truly is the best homemade frozen custard I’ve ever tasted. This recipe isn’t just about mixing ingredients; it’s about crafting an experience. The secret lies in Carrian’s meticulous process, particularly her use of egg yolks, which elevates this treat from a simple ice cream to an incredibly rich and creamy frozen custard. This culinary technique ensures a texture that is dense, smooth, and utterly delightful, avoiding the icy, thin consistency sometimes found in other homemade ice creams. The flavor is profoundly enhanced, making every spoonful a pure joy.

The journey to creating this perfect frozen custard begins with understanding what truly makes it special. While many people use the terms “ice cream” and “frozen custard” interchangeably, there’s a distinct difference that significantly impacts the final product. Carrian’s recipe embraces the traditional method of making frozen custard, which involves cooking egg yolks into the base. This step is crucial for achieving that signature velvety texture that we adore. It’s a method that requires a little patience and attention to detail, but the reward is a dessert that melts luxuriously on your tongue, unlike any other. Using a thermometer is highly recommended to ensure the base is cooked to the ideal temperature without overdoing it, preventing any scrambling of the eggs.

A generous serving of homemade Cookies and Cream Frozen Custard, topped with extra Oreo pieces, promising ultimate creaminess and flavor.

And what’s cookies and cream without a generous amount of cookies? We believe in going all out. There’s nothing more disappointing than buying a pint of cookies and cream ice cream only to find a meager scattering of tiny cookie chunks. With our homemade version, you control the cookie-to-custard ratio, and we always err on the side of “the more, the merrier!” Crushed Oreo cookies are folded into the luscious base, ensuring that every bite delivers a satisfying crunch and bursts with that iconic chocolatey flavor. This commitment to abundance is what makes Carrian’s recipe truly stand out and provides an unparalleled dessert experience for every ice cream lover.

Embarking on the journey of making your own frozen custard might seem daunting at first, but with a few key insights and tips, you’ll be churning out professional-quality desserts in no time. The foundational technique of tempering egg yolks, for example, is essential. This involves gradually introducing the hot cream mixture to the whisked egg yolks, slowly raising their temperature to prevent them from scrambling. This gentle process ensures a smooth, consistent base that is free from lumps and contributes directly to the custard’s signature creamy texture. Additionally, proper chilling of the base before churning is paramount. Allowing the mixture to chill overnight or for several hours in the refrigerator not only deepens the flavors but also ensures that the base is cold enough for the ice cream maker to work its magic efficiently, resulting in a perfectly dense and creamy frozen treat. Mastering these steps will unlock a world of delicious homemade frozen custards, making every spoonful a testament to your culinary efforts.

Is Frozen Custard the Same As Ice Cream? Unveiling the Differences

While often grouped together, **Frozen Custard is not exactly the same as Ice Cream**. Both delightful frozen desserts share fundamental ingredients: milk, cream, and sugar. However, the distinguishing factor that sets frozen custard apart, and gives it its signature rich, smooth, and incredibly dense texture, is the addition of pasteurized egg yolks to the base. This extra ingredient, along with specific churning processes, makes frozen custard a distinctly luxurious treat. The egg yolks not only enhance the creaminess but also help prevent the formation of ice crystals, resulting in a smoother, more decadent mouthfeel that melts slower than traditional ice cream. This makes frozen custard a preferred choice for those seeking a truly premium and rich dessert experience.

Will Ice Cream Stay Frozen In a Cooler? Best Practices for Transporting Frozen Treats

Bringing your delicious homemade frozen custard or ice cream to a picnic or gathering requires careful planning, as **ice cream will not stay frozen in a cooler if you are only using regular ice**. The freezing point of water (0°C or 32°F) is simply not cold enough to maintain the solid state of ice cream, which typically needs temperatures well below freezing to remain firm. Regular ice will only cool the surrounding air and may even accelerate melting by direct contact. To keep your frozen treats perfectly solid and scoopable for an extended period, you will need to use dry ice. Dry ice, which is solid carbon dioxide, maintains a temperature of about -78.5°C (-109.3°F), providing the extreme cold necessary to keep ice cream frozen for hours. Always handle dry ice with caution, using gloves, and ensure good ventilation if transporting in an enclosed space.

Is Half and Half The Same As Evaporated Milk? Understanding Dairy Substitutions

When it comes to dairy ingredients in recipes, substitutions can sometimes be tricky, but **in most recipes, half and half can be substituted with evaporated milk**. It’s important to understand their differences. Half and half, as its name suggests, is typically a blend of 50% whole milk and 50% light cream. This gives it a moderate fat content and a rich flavor profile. Evaporated milk, on the other hand, is cow’s milk from which about 60% of the water has been removed through evaporation. This concentration process results in a thicker, slightly sweeter, and often more intensely flavored milk product. Nutritionally, half and half is generally higher in fat and lower in protein and sugar compared to evaporated milk. While they can often be swapped in recipes that call for adding richness, be mindful of slight differences in flavor and consistency. For our creamy frozen custard, using true half and half (or a blend of milk and cream) is ideal for achieving the perfect richness and texture.

Instructions

  1. In a saucepan over medium-low heat, combine the heavy cream, half and half, sugar, and vanilla bean pod and seeds.
    2 Cups Heavy Cream,
    1 Cup Half and Half,
    1 1/4 Cup Sugar,
    1 Vanilla Bean
  2. Stir occasionally, heating the mixture until small bubbles form around the edges. Do not bring to a rolling boil.
  3. Remove the saucepan from the heat.
  4. Meanwhile, in a separate bowl, vigorously whisk 6 egg yolks together until they are pale yellow and slightly thickened.
    6 Egg Yolks
  5. To temper the egg yolks, take a few tablespoons of the hot cream mixture from the pan and slowly, while continuously whisking, pour the hot cream into the whisked eggs. This prevents the eggs from scrambling. Repeat this step about 5 times.
  6. Once the egg mixture has been tempered, return the saucepan with the remaining cream mixture to medium-low heat. Slowly whisk in the entire tempered egg mixture.
  7. Continue to heat, stirring constantly, until the custard base thickens. It should be thick enough to coat the back of a spoon, and when you drag your finger through the cream on the spoon, it should leave a clear trail. Do not allow the mixture to cook hotter than 160 degrees F (71 degrees C) to prevent curdling.
  8. Immediately remove the custard base from the heat and strain it through a fine-mesh sieve into a clean bowl. This ensures a perfectly smooth custard. Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for several hours, ideally overnight, until thoroughly cold.
  9. Once the custard mixture is completely chilled, freeze it according to your ice cream maker’s instructions (typically a 4-5 quart machine). Follow the manufacturer’s guidelines for optimal results.
  10. When the ice cream is almost done churning and has reached a soft-serve consistency, take approximately one sleeve of Oreo cookies and break them into chunks. Add these crushed cookies into the ice cream machine during the last few minutes of churning.
    1 1/2 Sleeves Oreos
  11. Transfer the churned frozen custard to a freezer-safe container, adding it in layers. Crumble the remaining half sleeve of Oreo cookies into each layer as you fill the container, ensuring a generous distribution of cookies throughout. Freeze for at least four hours (or ideally overnight) before serving for the best firm texture.
