Instructions

  1. Whisk together orange juice, remaining 3 tablespoons olive oil, remaining teaspoon sugar, garlic, water (if using), salt, and pepper in a medium bowl.
  2. Place marinade and chicken in a gallon-size zipper-lock bag and toss to coat.
  3. Press out as much air as possible and seal the bag.
  4. Refrigerate for 30 minutes, flipping the bag after 15 minutes.
  5. Turn all grill burners to high and heat with the lid down until very hot, about 15 minutes.
  6. Scrape the grate clean with a grill brush.
  7. Dip a wad of paper towels in oil; holding the wad with tongs, wipe the cooking grate.
  8. Leave the primary burner on high and turn off other burner(s).
  9. Remove chicken from the bag, allowing excess marinade to drip off.
  10. Place chicken on the cooler side of the grill, smooth-side down, with the thicker side facing the lit burner.
  11. Cover and cook until the bottom of the chicken just begins to develop light grill marks and is no longer translucent, 6 to 9 minutes.
  12. Using tongs, flip the chicken and rotate so that the thinner side faces the lit burner.
  13. Cover and continue to cook until chicken is opaque and firm to the touch and an instant-read thermometer inserted into the thickest part of the chicken registers 140 degrees, 6 to 9 minutes longer.
  14. Move chicken to the hotter side of the grill and cook, uncovered, until dark grill marks appear, 2 to 3 minutes.
  15. Using tongs, flip the chicken and cook until dark grill marks appear and an instant-read thermometer inserted into the thickest part of the chicken registers 160 degrees, 2 to 3 minutes longer.
  16. Transfer chicken to a cutting board, let rest, tented with foil, for 5 minutes.
  17. Slice each breast on the bias into 1/4-inch-thick slices and transfer to individual plates.
