  • Flaked Sea Salt

  • 1/4 Cup Light Corn Syrup
  • 5 Tablespoons Unsalted Butter
  • 1 Cup Heavy Cream
  • 1 teaspoon Flaked Sea Salt
  • 1/2 teaspoon Vanilla

Instructions 

  • In a large, heavy-bottomed saucepan over medium-high heat, combine the sugar and corn syrup. This initial step is crucial for building the caramel base.
    1 3/4 Cup Sugar, 1/4 Cup Light Corn Syrup
  • Bring the mixture to a boil and cook, gently swirling the pan occasionally to prevent hot spots, until a beautiful golden-amber color appears. This stage requires patience; resist the urge to stir vigorously.
  • It is very important not to overcook the sugar, as it will quickly burn and become bitter.
  • While the sugar mixture begins its transformation, in a separate small saucepan, combine the unsalted butter, heavy cream, and flaked sea salt. Heat this mixture over medium heat.
    1 Cup Heavy Cream, 5 Tablespoons Unsalted Butter, 1 teaspoon Flaked Sea Salt
  • Continue cooking the cream mixture until the butter is completely melted and the mixture is warm, but not boiling.
  • Once the sugar mixture reaches the desired golden-amber color, immediately remove it from the heat. Reduce the burner to medium-low.
  • Carefully and very slowly pour the warm cream mixture into the hot sugar mixture, stirring continually with a wooden spoon. Be cautious as the mixture will bubble up vigorously.
  • The candy mixture may seize or harden briefly due to the temperature difference; this is normal. Continue stirring until everything is thoroughly combined and smooth. Stir in the vanilla extract.
