The Instant Pot: Your Weeknight Dinner Savior
The Instant Pot has firmly established itself as an indispensable kitchen appliance, and for good reason. Its ability to transform complex recipes into simple, hands-off meals is unparalleled, making life significantly easier for home cooks everywhere. Forget the slow cooking methods that demand hours of simmering; with an electric pressure cooker, you can achieve incredible depth of flavor and perfect texture in a fraction of the time. It’s ideal for those moments when dinner plans have slipped your mind, and you need a delicious, wholesome meal on the table in minutes rather than hours.
When it comes to Instant Pot recipes, particularly those featuring chicken, the speed and efficiency are truly remarkable. Pressure cooking ensures that chicken remains moist and tender, absorbing all the rich flavors of the sauce. This means you can create dishes like our chicken curry, or even something as simple as BBQ chicken, with minimal effort and maximum impact. The electric pressure cooker truly streamlines dinnertime routines, making it a beloved tool in countless kitchens.
One of the Instant Pot’s most convenient features is its capacity to cook frozen chicken directly. While this can result in a slightly more liquidy dish, it’s a lifesaver when you forget to thaw meat ahead of time. Simply adjust your cooking time and potentially thicken the sauce slightly at the end, and you’ll still have a delicious meal ready to go. This flexibility further solidifies the Instant Pot’s status as a must-have appliance for any busy household.

Essential Ingredients for Your Instant Pot Chicken Curry Recipe
Gathering the right ingredients is the first step to creating a truly spectacular curry. This recipe focuses on fresh, accessible items that build layers of flavor without requiring a trip to a specialty store. Here’s your comprehensive grocery list:
- Chicken Breast: Boneless, skinless chicken breast keeps the dish lean and cooks quickly. You can also use chicken thighs for a richer flavor.
- Potatoes: Yukon Gold potatoes are recommended for their creamy texture, but other varieties work well too.
- Red Curry Paste: This is the backbone of our curry’s flavor. Opt for a good quality paste, not powder, for authentic taste.
- Garlic: Freshly minced garlic provides an aromatic foundation.
- Ginger (fresh): Grated fresh ginger adds a bright, zesty warmth that complements the curry paste beautifully.
- Onion: Yellow onion, chopped, adds sweetness and depth to the base.
- Carrots: Sliced carrots contribute natural sweetness and a lovely pop of color.
- Coconut Milk: Unsweetened full-fat coconut milk creates the creamy, rich sauce that is characteristic of this mild curry.
- Coconut Cream: A touch of coconut cream at the end adds extra richness and balances the flavors.
- Salt: Essential for seasoning and bringing out all the wonderful tastes.
- Cornstarch (optional): Used for thickening the sauce if you prefer a less liquid consistency.
- Water (optional): To mix with cornstarch for a slurry.
Specific measurements for each ingredient can be found in the detailed recipe card at the end of this post, ensuring you have everything you need for a perfectly balanced dish.

Crafting Your Instant Pot Chicken Curry: A Simple Guide
I promised you an easy meal, and now it’s time to deliver! While all the precise details are in the recipe card below, let’s walk through the basic steps to create this incredible Instant Pot Chicken Curry. The beauty of this recipe lies in its straightforward approach, allowing you to achieve complex flavors with minimal fuss.
- Sauté the Aromatics: Begin by using the Instant Pot’s Sauté function. Add a drizzle of oil and then introduce the aromatic foundation: red curry paste, minced garlic, grated fresh ginger, and chopped onions. Sauté until fragrant and the onions are tender, usually for about 3-5 minutes. This step is crucial for building the base flavor of your curry.
- Brown the Chicken: Add the sliced chicken breast to the pot. Sauté until the chicken is coated in the aromatic mixture and is no longer pink on the outside. This quick browning adds an extra layer of flavor.

- Add Vegetables and Liquid: Gently incorporate the chopped potatoes and carrots, then pour in the unsweetened coconut milk. Stir everything well to ensure all ingredients are submerged and coated, and to deglaze the bottom of the pot, preventing any “burn” notices.
- Pressure Cook to Perfection: Turn off the Sauté mode. Secure the lid, set the sealing valve to “Sealing,” and cook on Manual (High Pressure) for 10 minutes. This short cooking time is all it takes to tenderize the chicken and vegetables while infusing them with the rich curry flavors.
- Natural Release and Finishing Touches: Once cooking is complete, allow a 5-10 minute natural pressure release before carefully performing a quick release of any remaining pressure. Open the lid, stir everything together.
- Sweeten and Thicken (Optional): If desired, turn the Sauté function back on to high until the curry begins to simmer. Stir in a portion of coconut cream, then taste. Add more if you prefer a sweeter, richer flavor. For a thicker sauce, create a slurry by mixing cornstarch with a little water, then slowly drizzle it into the boiling curry while stirring until it reaches your desired consistency.
- Season and Serve: Finally, season the curry with salt and pepper to taste. A sprinkle of fresh cilantro before serving adds a beautiful burst of freshness. Serve immediately and enjoy your homemade Instant Pot Chicken Curry!
Perfect Pairings: What to Serve with Chicken Curry
While our Instant Pot Chicken Curry with Potatoes is a complete meal in itself, offering a hearty combination of protein and carbohydrates, there are many delightful accompaniments that can elevate your dining experience. We love serving it over fluffy white Jasmine rice, which perfectly soaks up the flavorful sauce. However, other grains like basmati rice, quinoa, or even couscous would also be fantastic.
For those who enjoy a fuller Indian-inspired spread, don’t forget to include some warm, pillowy homemade naan bread for dipping. A crisp side salad or a selection of fresh fruit can also provide a refreshing contrast to the richness of the curry. And for the ultimate indulgence? A creamy, sweet mango lassi. We definitely need to share a recipe for that soon!

Choosing the Right Potatoes for Your Instant Pot Curry
Potatoes are a fantastic addition to curry, offering a hearty texture and absorbing the rich flavors of the sauce beautifully. While they are an easy and convenient ingredient for any dinner, selecting the right type can enhance your dish. For this Instant Pot Chicken Curry, we highly recommend Yukon Golds. Their naturally creamy texture and slightly buttery flavor integrate seamlessly into the curry sauce, providing a luxurious mouthfeel.
However, don’t feel limited! A simple Russet potato, known for its starchy quality, or even any variety of white or red potato will absolutely work. If you’re feeling adventurous or simply have them on hand, sweet potatoes can also be a wonderful addition, offering a different sweet and earthy dimension to the dish. Ultimately, the choice is yours, based on preference and what’s available in your pantry.

Is Curry British or Indian? Unraveling Its Origins
The term “curry” commonly refers to a diverse range of dishes originating from the Indian subcontinent, characterized by their complex blend of spices. These flavorful stews and dry preparations have been a staple of Indian cuisine for centuries, each region boasting its unique variations and spice profiles.
Interestingly, while the essence of curry is deeply Indian, the term itself was actually introduced to the world by the British. During the British Raj, the word “curry” became a catch-all term for various Indian spiced dishes, simplifying their vast culinary landscape for a Western audience. So, while the flavors and techniques are undoubtedly Indian, the widely used English word for them has British roots.

Is Curry Healthy? Exploring its Nutritional Benefits
Curry, in its broad definition, generally consists of a balanced combination of meat or plant-based protein, and a variety of vegetables, all cooked in a richly spiced sauce and often served over rice. Given this composition, many curries can indeed be considered a healthy addition to your diet.
The inclusion of numerous vegetables provides a wealth of essential vitamins, minerals, and dietary fiber. Furthermore, the spices commonly used in curry, such as turmeric, ginger, and garlic, are renowned for their anti-inflammatory and antioxidant properties, contributing to overall well-being. When prepared with lean proteins and a moderate amount of healthy fats (like those from coconut milk), curry can be a nutritious and incredibly satisfying meal.

Will Curry Cause Heartburn? A Note on Spice Levels
For some individuals, spicy foods are a known trigger for acid reflux, which can lead to uncomfortable heartburn. Curries, particularly those with a higher chili content or a strong kick from ingredients like cayenne pepper, fall into this category. If you are prone to heartburn, it’s advisable to adjust the spice level to your personal tolerance. Our Instant Pot Chicken Curry with Potatoes is designed to be mild, but you can always reduce the amount of red curry paste to make it even gentler on your stomach, or increase it if you prefer more heat.
Red Curry vs. Yellow Curry: Understanding the Flavor Differences
When exploring the world of Thai curries, red and yellow are two popular varieties, each offering a distinct flavor profile. Yellow curry is generally characterized by a milder, slightly sweeter taste, often deriving its color from turmeric and a subtle sweetness from coconut milk and sometimes palm sugar. It’s typically a good entry point for those new to curry.
Red curry, on the other hand, boasts a bolder, spicier flavor, owing to the generous use of dried red chilies in its paste. While our recipe is designed to be mild, traditional red curries can range from medium to intensely hot. The depth of flavor in red curry comes from a blend of ingredients that, beyond chilies, often include lemongrass, galangal, kaffir lime zest, and shrimp paste, creating a more complex and pungent experience.

Jasmine Rice vs. Long Grain Rice: What’s the Difference?
Rice is an essential accompaniment to many curry dishes, and choosing the right type can enhance your meal. From a nutritional standpoint, Jasmine rice and general long-grain white rice are quite similar in their macronutrient profiles. However, their culinary characteristics differ significantly.
White rice can broadly categorize into long, medium, or short grain varieties, each with unique cooking properties. Jasmine rice, specifically, is a type of long-grain white rice, primarily grown in Thailand. What sets it apart is its unique, fragrant aroma, often described as having a subtle popcorn-like scent. This aromatic quality adds another dimension to your meal, perfectly complementing the rich flavors of a curry.
Is Jasmine Rice Sticky?
Yes, when cooked correctly, Jasmine rice has a soft, slightly sticky, and fluffy texture. This characteristic stickiness makes it ideal for pairing with saucy dishes like curry, as it allows the rice to cling to the sauce, ensuring every bite is full of flavor. Its delicate texture and fragrant steam make it a preferred choice for many Asian cuisines.

I understand that the word “curry” can sometimes evoke hesitation. Concerns about overly strong or excessively spicy flavors are common, and honestly, I’ve had those reservations myself. However, this particular Instant Pot Chicken Curry recipe is designed to be wonderfully subtle, with a hint of sweetness from the coconut, making it incredibly approachable and truly delicious. It’s a proven favorite with everyone in our family, and I’m confident it will become one of yours too! Don’t let past experiences with curry deter you; give this mild and comforting version a try!
