Pretzel Buns

  • 1 Tablespoon Sugar
  • 2 teaspoons Kosher Salt
  • 1 Package Active Dry Yeast

  • 4 Tablespoons Unsalted Butter
  • 10 Cups Water
  • 2/3 Cup Baking Soda, scant
  • 1 Egg
  • 1 Tablespoon Water
  • 3 Cups Sharp Cheddar Cheese, shredded
  • 4 Jalapeños, chopped
Turkey Chili
  • 1 Tablespoon Olive Oil
  • 3/4 teaspoon Salt
  • 1/4 Cup Onions, minced
  • 1/2 Pound Ground Turkey
  • 1 Can Chili Beans
  • 1 Can Chili Ready Chopped Tomatoes
  • 2 teaspoons Chili Powder
  • 1 teaspoon Sugar
Remaining Ingredients
  • 2 Cups Cheddar Cheese
  • 1 Cup Monterey Jack Cheese

Instructions

For the Pretzels
  1. In the bottom of a stand mixer, combine 1 ½ Cups Warm Water, 1 Tablespoon Sugar, and 2 teaspoons Kosher Salt.
  2. Sprinkle 1 Package Active Dry Yeast over. Let set for 5 minutes until foamy.
  3. Add in 4 ½ Cups All-Purpose Flour and 4 Tablespoons Unsalted Butter.
  4. Using the dough hook, mix the dough until combined on a low speed. Increase the speed to medium and mix for five to seven minutes until dough becomes smooth and pulls away from the sides of the bowl.
  5. On the last 30 seconds or so, add 1 cup of the Sharp Cheddar Cheese and 3 chopped Jalapeños.
  6. Rinse bowl off and then grease with canola oil.
  7. Place dough in the bottom and coat with oil.
  8. Cover with a towel and place in a warm, draft-free place. Let rise for one hour.
  9. While the dough rises, prepare the turkey chili.
For the Turkey Chili
  1. In a large skillet, over a medium-high heat, add 1 Tablespoon Olive Oil, 3/4 teaspoon Salt, 1/4 Cup minced Onions, and 1/2 Pound Ground Turkey.
  2. Cook until turkey is browned, about five minutes.
  3. Add 1 Can Chili Beans, 1 Can Chili Ready Chopped Tomatoes, 2 teaspoons Chili Powder, and 1 teaspoon Sugar.
  4. Simmer for 8-10 minutes.
  5. Set aside.
Make the Pretzels
  1. Once the dough has risen, divide into 12 equal portions.
  2. Form into bun shapes to fit your hot dogs.
  3. Preheat oven to 450 degrees Fahrenheit.
  4. Bring 10 Cups Water to a rolling boil in a large stockpot.
  5. Add 2/3 Cup Baking Soda to the boiling water.
  6. Place pretzels one at a time in the water and baking soda mixture.
  7. Cook for 1 minute 20 seconds, flipping halfway through.
  8. Transfer pretzels to a greased baking sheet.
  9. Whisk 1 Egg and 1 Tablespoon Water together in a small bowl.
  10. Brush pretzels with egg wash and then sprinkle remaining 2 Cups Cheddar Cheese, 1 Cup Monterey Jack Cheese, and 4 Jalapeños.
  11. Bake until golden brown, about 12-15 minutes or until golden brown.
