What Ingredients Do I Need to Make Red Chicken Enchiladas?

The foundation of any great dish lies in its ingredients. For our red chicken enchiladas, a combination of fresh, high-quality components ensures maximum flavor. If you’re venturing into making our homemade red enchilada sauce, please refer to that dedicated post for its ingredient list. The beauty of this enchilada filling is its simplicity, requiring just a few key items:

  • Chicken Breasts: Boneless, skinless chicken breasts are ideal for their lean protein and ease of shredding. They absorb the rich red sauce beautifully during the simmering process, becoming incredibly tender and flavorful. You can also use chicken thighs for an even juicier result.
  • Sharp White Cheddar Cheese: This cheese adds a tangy, robust flavor profile that stands up wonderfully to the spice of the red sauce. It provides a delightful sharpness and melts into a gooey, savory layer.
  • Monterey Jack Cheese: Known for its superior melting qualities, Monterey Jack cheese brings a creamy, mild counterpoint to the sharp cheddar. Its smooth texture ensures that classic cheesy pull we all love in enchiladas.
  • Cilantro: Freshly minced cilantro is essential for its bright, herbaceous notes that cut through the richness of the cheese and sauce, adding a burst of freshness to every bite.
  • Corn Tortillas: For authentic enchiladas, corn tortillas are traditionally preferred. They offer a distinct texture and flavor that complements the red sauce perfectly. They are also naturally gluten-free.
  • Toppings: Customize your enchiladas with your favorite garnishes. We highly recommend thinly sliced red onion for a zesty crunch and fresh jalapeños for an extra kick. Other popular options include sour cream, avocado slices, fresh salsa, or a sprinkle of cotija cheese.

How to Make Red Chicken Enchiladas: A Step-by-Step Guide

Once you have prepared your homemade red enchilada sauce (or acquired your preferred store-bought brand – refer to the recipe card notes for tips on using canned sauce), the assembly of these savory enchiladas is remarkably straightforward. The complete, detailed instructions are provided in the recipe card below, but here’s a simplified overview to get you started on this delicious journey:

  • Simmer the Chicken: Begin by gently simmering your chicken breasts directly in a portion of the rich red enchilada sauce. This crucial step infuses the chicken with incredible flavor as it cooks through, ensuring every shred is succulent and seasoned from within.
  • Cool and Shred: Once the chicken is cooked, carefully remove it from the sauce, reserving the remaining liquid. Allow the chicken to cool slightly until it’s comfortable enough to handle. Then, shred it into bite-sized pieces using two forks or your hands. This creates the perfect texture for a hearty filling.
  • Prepare the Filling: In a mixing bowl, combine the shredded chicken with a generous amount of the reserved enchilada sauce, a blend of both sharp white cheddar and Monterey Jack cheeses, and fresh cilantro. Stir everything together until the ingredients are well-combined and the chicken is coated in a vibrant, cheesy mixture. This is where the magic of the filling truly comes alive, creating a harmonious balance of flavors and textures.

Troubleshooting Tortillas: Why Do My Tortillas Keep Breaking?

One of the most common frustrations when making enchiladas is dealing with stubborn tortillas that crack and break as you try to roll them. This usually happens when the tortillas are too cold or dry. Warming them properly is key to achieving that soft, pliable texture necessary for perfectly rolled enchiladas. Here are a few reliable tips to ensure your tortillas remain intact and flexible:

  1. Skillet Heating Method: Heat a dry skillet over medium-high heat. Quickly place each tortilla in the hot skillet for about 10-15 seconds per side, just until it becomes warm and slightly flexible. Do not let them get crispy. As you heat them, stack them and keep them covered under a thick towel or wrapped in aluminum foil to retain their warmth and moisture. This steaming action is vital.
  2. Microwave with Plastic Wrap: For a quick and easy solution, wrap a stack of 5-6 tortillas tightly in plastic wrap. Microwave them for 30-60 seconds, or until they are warm and bendable. The plastic wrap traps steam, making them soft. Use these immediately, heating additional batches as needed.
  3. Microwave with a Damp Towel: Alternatively, wrap your tortillas in a slightly damp paper towel or kitchen towel. Microwave them in short intervals (e.g., 20-30 seconds), checking for pliability after each burst. Again, use them promptly to prevent them from drying out.

The goal is to create enough steam within the tortilla to soften its structure, allowing it to bend without tearing. Once warmed, they become much easier to work with, making the enchilada assembly process smooth and enjoyable.

Assembling and Baking Your Perfect Red Chicken Enchiladas

With your flavorful chicken filling ready and your tortillas perfectly pliable, it’s time to bring these red chicken enchiladas to life. This part of the process is quick and rewarding, leading you closer to a delicious meal:

  • Preheat your oven to 425 degrees F (220 degrees C). A hot oven ensures the tortillas get a nice initial browning before the sauce and cheese are added.
  • Lightly spray a 9×13 inch baking dish with cooking spray to prevent sticking and ensure easy serving.
  • Working quickly while they are still warm and pliable, take one tortilla at a time.
  • Place a generous 1/3 cup of the savory chicken mixture evenly down the center of each tortilla.
  • Roll up the tortilla tightly around the filling, creating a neat cylinder.

  • Carefully place the rolled tortillas seam-side down in the prepared baking dish, arranging them snugly side-by-side.
  • Repeat this process with all the remaining filling and tortillas until your baking dish is full.
  • Lightly spray the tops of the assembled enchiladas with cooking spray. This helps them crisp up slightly in the initial bake.

  • Bake the enchiladas in the preheated oven for about 7 minutes, or until the tortillas begin to brown slightly at the edges. This initial bake adds a pleasant texture.
  • After the initial bake, reduce the oven temperature to 400 degrees F (200 degrees C).
  • Carefully pull the baking dish out of the oven. Evenly pour the remaining luscious red enchilada sauce over the tops of the partially baked enchiladas, ensuring every roll is generously coated.

  • Sprinkle the remaining shredded cheddar and Monterey Jack cheeses generously over the sauced enchiladas. This will create a magnificent melted cheese topping.
  • Cover the baking dish tightly with aluminum foil to steam the enchiladas and melt the cheese evenly without drying out the tortillas. Bake for 20 minutes.
  • For the final touch, remove the foil for the last 5 minutes of baking. This allows the cheese to get beautifully golden and bubbly, and for the edges of the tortillas to crisp up slightly.
  • Once baked to perfection, remove the enchiladas from the oven. Resist the urge to dive in immediately! Let them sit and rest for 10 minutes before serving. This crucial step allows the sauce and filling to settle, making for cleaner slices and preventing a watery mess.
  • Finally, top your magnificent red chicken enchiladas with your favorite garnishes, such as fresh cilantro, sliced red onion, and jalapeños, and serve warm.

What Is The Difference Between Enchiladas and Burritos?

While both enchiladas and burritos are popular Mexican and Tex-Mex dishes featuring tortillas wrapped around a filling, they have distinct characteristics that set them apart, rooted in their traditional preparation and serving styles.

Enchiladas are traditionally made with smaller corn tortillas. These tortillas are typically softened, filled with a savory mixture (like our chicken and cheese filling), rolled up, and then arranged in a baking dish. The defining feature of enchiladas is that they are almost always smothered in a flavorful sauce (like our vibrant red enchilada sauce) and often topped with cheese before being baked until bubbly and hot. They are typically served with a fork and knife, making them a hearty, saucy dish.

Burritos, on the other hand, usually employ larger flour tortillas. These tortillas are generally used unwarmed or lightly warmed, filled with a wider variety of ingredients—from beans and rice to meats, vegetables, and salsas—and then tightly rolled or folded into a portable package. Unlike enchiladas, burritos are traditionally served dry, meaning the sauce is either incorporated into the filling or offered on the side for dipping. Their larger size and handheld nature make them a popular choice for a quick, on-the-go meal.

In essence, the key differentiators lie in the type and size of the tortilla, the way the sauce is applied (smothered vs. on the side), and the overall presentation and consumption method. Both are delicious, but they offer very different culinary experiences!

Can Red Chicken Enchiladas Be Made Ahead?

Absolutely! Red chicken enchiladas are a fantastic make-ahead meal, perfect for busy weeknights or entertaining. You can fully assemble the enchiladas—filling and rolling the tortillas and arranging them in the baking dish—without pouring the sauce or adding the top layer of cheese. Once assembled, cover the dish tightly with plastic wrap and then aluminum foil to prevent air exposure. Store them in the refrigerator for up to 2-3 days. When you’re ready to bake, simply remove them from the fridge, pour the sauce and cheese over them, and bake as directed, potentially adding an extra 10-15 minutes to the baking time if starting from cold.

Can Red Chicken Enchiladas Be Frozen?

Yes, red chicken enchiladas freeze beautifully, making them an excellent option for meal prepping and having a delicious dinner ready on short notice. Here’s how to do it effectively:

  • Refrigerator Storage: Leftover baked enchiladas can be stored in an airtight container in the refrigerator for 2-3 days.
  • For Freezing (Unbaked): Assemble the enchiladas in a freezer-safe baking dish, but do not add the sauce or cheese yet. Wrap the entire pan securely with multiple layers of aluminum foil, crimping the edges for a tight, airtight seal. This prevents freezer burn.
  • For Freezing (Baked Leftovers): Allow baked enchiladas to cool completely. You can freeze individual portions in airtight containers or wrap the entire pan as described above.
  • Freeze for up to 3 months for best quality. Label with the date.
  • Reheating from Frozen (Unbaked): Thaw the enchiladas in the refrigerator overnight. Then, pour the sauce and cheese over them and bake according to the recipe instructions, adding extra baking time as needed.
  • Reheating from Frozen (Baked): Bake, covered with foil, at 350°F (175°C) for 30-45 minutes, or until heated through. Uncover for the last 10-15 minutes to melt the cheese and get it bubbly.

Corn Tortillas vs. Flour Tortillas for Enchiladas

When it comes to authentic enchiladas, the debate between corn and flour tortillas can be quite passionate. We, along with many culinary purists, strongly prefer the distinct flavor and texture of corn tortillas, especially when paired with our rich red enchilada sauce and savory chicken filling. Corn tortillas offer an earthy, slightly sweet flavor and a more traditional texture that truly shines in this dish.

However, we understand that preferences vary. If you have strong feelings for flour tortillas, you can certainly use them! They tend to be more pliable naturally, which can simplify the rolling process, especially for those new to making enchiladas. Just be aware that using flour tortillas will change the overall texture and traditional profile of the dish, and it might indeed “offend enchilada purists” who insist that only corn tortillas should be used.

An added benefit of sticking with corn tortillas is that they naturally keep these red chicken enchiladas gluten-free. This is a significant advantage for those with dietary restrictions or who prefer to avoid gluten. Regardless of your choice, remember the importance of warming your tortillas to make them pliable and prevent tearing, a crucial step for both corn and flour varieties.
