This Lemon Jello Cake is perfect anytime of year, but it’s especially great for Easter and the 4th of July. It’s an easy lemon cake that uses a few shortcuts to speed things up!

Ingredients

For the Cake

    Lemon Cake Mix,
    15.25 oz

    Vegetable Oil

    Lemon Jello,
    small box — 3 oz

For the Icing



  • 2
    Lemons,
    juiced

    Powdered Sugar

Instructions

Make the Jello Cake:

  • Preheat your oven to 350 degrees F (175°C).
  • Lightly spray a 9×13-inch baking dish with nonstick spray, then sprinkle with flour to coat evenly.
  • Gently tip and tap the edges of the cake pan to ensure the flour fully coats all surfaces, then tap out any excess.
  • In the bowl of a stand mixer (or a large bowl with a hand mixer), combine the lemon cake mix, large eggs, water, vegetable oil, and lemon jello powder. Mix until just combined and smooth, being careful not to overmix.
    1 Box Lemon Cake Mix,
    4 Eggs,
    1 ⅓ Cups Water,
    2/3 Cup Vegetable Oil,
    1 Package Lemon Jello
  • Pour the prepared cake batter evenly into the greased and floured baking pan.
  • Bake for 27-30 minutes, or until a wooden skewer inserted into the center comes out clean. While the cake is baking, prepare the lemon icing according to the instructions below.
  • Once the cake is baked, remove it from the oven. While it’s still hot, use a fork to poke holes all over the surface of the cake.
  • Immediately and evenly pour the freshly made lemon icing over the hot cake, allowing it to soak into the poked holes.

Make the Lemon Icing:

  • In a small bowl, whisk together the fresh lemon juice and powdered sugar until the mixture is completely smooth and free of lumps.
    2 Lemons,
