Ingredients

  • 1 Package Tri Color Tortellini, any kind will do
  • 1 Pound Sausage, turkey sausage if you can find it
  • 1 Tablespoon Olive Oil
  • 1 Clove Garlic
  • 1 1/2 Tablespoons Flour
  • 1 1/4 Cup Unsweetened Almond Milk
  • 3/4 Cup Prepared Pesto, we buy ours at Costco
  • 3/4 Cup Low Fat Mozzarella Cheese, shredded

Instructions

  1. Heat a large skillet over medium heat and add the 1 Pound Sausage.
  2. Cook, stirring occasionally to break up the meat, about 6-8 minutes or until cooked through.
  3. Drain the grease and place the meat on a plate.
  4. Place the pan with browned bits back on the burner and add the 1 Tablespoon Olive Oil and 1 Clove Garlic.
  5. Heat the pan back up to medium heat.
  6. Meanwhile, heat a large pot over medium heat, filled halfway with water. Season with 1/2-1 teaspoon of salt and bring to a boil.
  7. Add the 1 Package Tri Color Tortellini to the boiling water and cook to al dente.
  8. Once the browned bits pan is hot, add the 1 1/2 Tablespoons Flour and whisk for 30 seconds.
  9. Quickly add the 1 1/4 Cup Unsweetened Almond Milk and continue to whisk.
  10. Once the sauce comes to a boil, turn down to a simmer and allow to thicken.
  11. Add the 3/4 Cup Prepared Pesto, whisk again and heat through.
  12. Heat the oven to broil.
  13. Place the cooked tortellini in a baking dish, add the sausage and sauce and carefully fold all of the ingredients together.
  14. Sprinkle the top with a little 3/4 Cup Low Fat Mozzarella Cheese and place under the broiler until melted.
