  • 4 Russet Potatoes, cut in wedges
  • 1 Clove Garlic
  • 1/4 Cup Olive Oil
  • 1 Tablespoon Kosher Salt
  • 1/2 teaspoon Lemon Zest
  • 1/2 Juiced Lemon
  • 4 Cloves Garlic, whole in their papers

For Tzatziki

  • 2 Cups Greek Yogurt, plain
  • 3 Tablespoons Lemon Juice
  • Salt to Taste

Instructions 

  • Preheat your oven to 425 degrees Fahrenheit (220°C). On a large baking sheet, toss the potato wedges with olive oil, 1 clove of minced garlic, Kosher salt, lemon zest, and the juice of half a lemon. Ensure all potatoes are evenly coated. Spread them in a single layer for optimal crisping. Bake for 1 hour or until they are golden brown, tender, and crispy, flipping them halfway through. At the halfway mark (after 30 minutes), add the 4 whole garlic cloves (still in their papers) to the baking sheet with the potatoes.
    4 Russet Potatoes, 1/4 Cup Olive Oil, 1 Tablespoon Kosher Salt, 1/2 teaspoon Lemon Zest, 1/2 Juiced Lemon, 4 Cloves Garlic
  • Once roasted, remove the whole garlic cloves from their papers. They should be soft and caramelized. Mince them very finely to incorporate into the tzatziki, or mash them with a fork for a smoother consistency.
  • For the Tzatziki:
  • In a medium bowl, combine the Greek yogurt, lemon juice, the finely minced roasted garlic (from step 2), and a pinch of salt. Stir until well combined. For an extra refreshing kick, you can also add finely grated cucumber (squeezed of excess liquid) and a touch of fresh dill or mint, if desired. Taste and adjust salt or lemon juice as needed.
