This Reese’s Peanut Butter Marshmallow Cookie Pie is an indulgent and simple dessert, perfect for any occasion.

Ingredients

  • 1 Package Peanut Butter Cookie Dough (or 1 recipe of homemade dough; we often use Pillsbury for convenience)
  • 1/2 Cup Chocolate Chips
  • 12 Reese’s Peanut Butter Cups
  • 1 1/2 to 2 Cups Mini Marshmallows
  • Hot Fudge for Drizzle

Instructions

  • Preheat your oven to 350°F (175°C).
  • Lightly spray a standard pie pan with nonstick cooking spray.
  • Press about two-thirds of the peanut butter cookie dough evenly over the bottom and up the sides of the prepared pie plate, forming a crust.
  • Bake for 5 to 8 minutes, or until the edges are just beginning to set and lightly golden, but the center is still soft and not fully baked through.
  • Evenly sprinkle chocolate chips over the partially baked crust. Arrange the Reese’s Peanut Butter Cups over the chocolate chips.
  • Generously sprinkle mini marshmallows over the top of the peanut butter cups and chocolate chips.
  • Take the remaining cookie dough and press it into approximately 1/4-cup sized balls. Flatten each ball slightly in the palm of your hand and carefully place them over the top of the pie, covering the marshmallows and candies.
  • Return the pie to the oven and bake for an additional 15–18 minutes, or until the top cookie dough is golden brown and the marshmallows are toasted and gooey.
  • Remember, the pie will be delightfully gooey inside, so it might jiggle a little when you remove it from the oven.
  • Allow the pie to cool for 6-10 minutes before slicing for a warm, ultra-gooey experience, or wait about 20 minutes for a cleaner, perfect slice to come out of the pan.

Using a deep-dish pie plate, especially when serving a larger crowd, might extend baking time. For ours, it took almost 30 minutes to bake through thoroughly.
