This is our new breakfast tradition, apple pie pull apart bread with maple glaze and it only takes frozen roll dough to get started!

This recipe is a testament to how simple ingredients can yield extraordinary results. By utilizing frozen roll dough, we bypass the lengthy process of kneading and proofing from scratch, making this an accessible project for bakers of all skill levels. The magic truly happens when those soft dough layers are imbued with a rich, spiced apple filling and baked to golden perfection, then drizzled with a sweet, aromatic maple glaze that melts into every crevice. It’s a breakfast (or dessert!) that feels gourmet yet requires minimal effort.

Understanding Frozen Bread Dough: Shelf Life and Best Practices

A common question arises when working with frozen ingredients: can frozen bread dough go bad? The simple answer is yes, eventually. While freezing significantly extends its shelf life, it’s not indefinite. Generally, frozen bread dough maintains its optimal quality for about three to four months. Beyond this period, typically around six months, it may begin to suffer from freezer burn. This can result in a tough, leathery crust when baked, and the dough might not rise as effectively, leading to a less desirable texture and flavor.

For the best results with your apple pie pull-apart bread, aim to use frozen dough within the recommended three to four-month window. Proper storage is also key: ensure the dough is sealed in airtight packaging to prevent moisture loss and freezer burn. When you’re ready to bake, gentle defrosting, usually overnight in the refrigerator or a few hours at room temperature, will prepare the dough perfectly for layering and baking, ensuring a soft, fluffy bread every time.

Just a few weeks ago, my husband Cade embarked on a challenging race called Epic, spanning from Logan, Utah, to Jackson Hole, Wyoming. As someone who doesn’t particularly enjoy running, and still navigating the early stages of pregnancy with “morning sickness,” I opted out of joining him. While Dad was off conquering mountains, my daughters and I indulged in a different kind of epic adventure: devouring this incredible apple pie pull-apart bread with maple glaze. This bread is a revelation, as wonderfully soft and sweet as a classic cinnamon roll, with tender, glazed apples reminiscent of a warm apple pie. And that maple glaze? It’s simply divine, truly the crowning glory of this unforgettable breakfast.

Selecting the Perfect Apples for Your Pull-Apart Bread

The choice of apples can dramatically influence the flavor and texture of your apple pie pull-apart bread. When crafting the ideal apple filling, the goal is to select varieties that maintain their firmness during cooking while offering a harmonious blend of tart and sweet notes. This balance ensures that the apples provide a delightful contrast to the sweet bread and glaze, without becoming mushy or bland.

Based on countless baking experiences, certain apple varieties consistently deliver superior results for baked goods like this pull-apart bread:

  • Granny Smith: Known for their crisp texture and distinctly tart flavor, Granny Smiths are excellent for providing a bright, refreshing counterpoint to the sweetness of the bread and glaze. They hold their shape beautifully.
  • Honeycrisp: A popular choice, Honeycrisp apples offer a perfect balance of sweetness and tartness, along with a firm, juicy crunch. They caramelize wonderfully and retain a pleasant bite.
  • Golden Delicious: These apples are sweet and mildly flavored, softening nicely when cooked but not entirely losing their structure. They contribute a lovely golden color and a mellow sweetness.
  • Rome: Romes are firm, round apples that hold their shape exceptionally well. They have a mild flavor that absorbs spices beautifully, making them ideal for a spiced apple filling.
  • Jonathan or Jonagold: Jonathan apples are tart and tangy, while Jonagolds (a cross between Jonathan and Golden Delicious) offer a sweeter, honeyed flavor with a firm texture. Both are fantastic for complex apple fillings.
  • Braeburn: With a crisp texture and a sweet-tart flavor, Braeburns are versatile baking apples that won’t become mushy, adding a pleasing depth to the filling.

Combining a few of these varieties, such as Granny Smith for tartness and Honeycrisp or Golden Delicious for sweetness, can create a more complex and nuanced flavor profile in your apple pie filling, elevating your pull-apart bread to new heights.

Glazed Apples just like an apple pie without the crust! ohsweetbasil.com

We’ve all scrolled through countless recipes for pull-apart bread online, a trending delight that catches the eye of many home bakers. However, our family typically gravitates towards a cherished classic: Mom’s sticky buns, a recipe that holds a special place in our hearts and rarely allows room for other bread variations. This time, though, my daughters were exceptionally well-behaved and expressed a strong desire for something extra special featuring apples. Given Cade’s absence for the two-day Ragnar-style race, running through the night and keeping him away for a few days, it felt like the perfect opportunity for a special treat. Their request inspired me to dive into this new creation.

Beyond the girls’ good behavior and their apple craving, I had another reason to create something memorable. Throughout this pregnancy, I’ve battled Hyperemesis Gravidarum, a challenging condition that often left me unable to be the mom I wanted to be. There were times when it was truly frightening for them to witness. While I know they don’t need me to “make it up” to them – they are incredibly excited about their baby brother’s arrival – I still yearned for some special, quality time with them. This baking project became that perfect opportunity for connection and comfort.

For this recipe, we opted for Rhodes frozen rolls, a fantastic shortcut that guarantees a soft, consistent dough base. Our previous successes with Cinnamon Roll Apple Danish, which proved to be absolutely awesome, and the perfectly authentic maple glaze from our Maple Bar Pancakes, gave me the confidence that I could combine elements from these beloved recipes to create something truly spectacular. My intuition proved right! The result was magnificent. In fact, the girls and I devoured the entire loaf between the three of us. While I did end up feeling a bit sugar-sick (sugar and my pregnancy don’t always agree, especially in such quantities over a single day of breakfast and snacking), it was undeniably worth every delicious, awesome bite. The layers of soft bread, spiced apples, and sweet maple glaze created a symphony of flavors and textures that we couldn’t resist.

After our delightful baking session and a hearty breakfast, us girls embarked on a special day out to Gardner Village. It was a charming outing filled with laughter and exploration, culminating in a visit to a nail salon. While nail salons aren’t typically my preferred activity, the pure joy and excitement on their little faces made it an incredibly worthwhile experience. Seeing their happiness was truly priceless.

It was truly a successful day, filled with connection, joy, and delicious food. I couldn’t help but feel that a higher power knew we all needed that special “girls’ day,” and I am profoundly grateful for such tender mercies. Moments like these, where simple pleasures create deep bonds, are truly invaluable. This apple pie pull-apart bread became more than just a recipe; it became a symbol of comfort, love, and a much-needed escape during a challenging time.

Ingredients

  • 22 Rhodes Rolls, defrosted

For the Filling

  • 4 Tablespoons Butter, softened
  • 1/3 Cup Brown Sugar, plus 1 Tablespoon
  • 2 teaspoons Cinnamon
  • 1/8 teaspoon Nutmeg
  • 3 Tablespoons Flour

For the Apples

  • 2 Apples, peeled and diced (we like Gala and Granny Smith, but really any is fine.)
  • 2 Tablespoons Butter
  • 1/4 Cup Sugar
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Flour

For the Glaze

  • 2 Tablespoons Butter, melted
  • 3/4 Cup Powdered Sugar
  • 1/2 teaspoon Maple Extract
  • 1/4 teaspoon Vanilla
  • 1 Tablespoon Heavy Cream or Half and Half, additional if needed

Instructions

  • Prepare your baking pan: Lightly spray a 9×5-inch bread pan with nonstick cooking spray. This will ensure your pull-apart bread doesn’t stick and comes out easily.
  • For the delectable cinnamon-sugar filling:
  • In a small bowl, combine the softened butter, brown sugar, cinnamon, nutmeg, and flour. Mix these ingredients thoroughly until a uniform, fragrant paste forms. This mixture will be spread between the dough layers, creating a rich, spiced flavor.
4 Tablespoons Butter, 1/3 Cup Brown Sugar, 2 teaspoons Cinnamon, 1/8 teaspoon Nutmeg, 3 Tablespoons Flour
  • Divide this filling mixture into two equal halves and set aside. This ensures you have enough for both stacks of bread.
  • For the perfectly tender, glazed apples:
    2 Apples
  • Place a nonstick skillet over medium heat and add the butter. Allow it to melt completely.
    2 Tablespoons Butter
  • Once the butter is melted and shimmering, quickly add the peeled and diced apples to the skillet. Toss them gently to coat evenly in the butter.
  • Cook the apples for about 3-5 minutes, stirring occasionally. You want them to start getting golden brown marks and become tender, but still hold their shape and not turn mushy. They should retain a slight bite.
  • Remove the skillet from the heat. Stir in the sugar, cinnamon, and flour. The residual heat will help these ingredients combine and create a beautiful glaze as the apples cool. If the glaze doesn’t thicken sufficiently, return the skillet to very low heat and stir until it reaches a desired consistency.
1/4 Cup Sugar, 1 teaspoon Cinnamon, 1 Tablespoon Flour
  • Allow the glazed apples to cool completely. For even distribution throughout the bread, separate the cooled apples into two dishes, then further divide each half into 10 smaller portions. This will create consistent layers.
  • Time to assemble your pull-apart masterpiece:
  • Ensure your Rhodes roll dough is thoroughly defrosted. It should be soft and pliable, ready for shaping.
    22 Rhodes Rolls
  • One by one, roll each dough ball into a rectangle or circle, approximately 4-6 inches in diameter. You can use a rolling pin or flatten them by hand.
  • Just like with the apples, divide each half of your cinnamon-sugar filling into 10 equal portions. This meticulous preparation ensures beautiful, even layers in your finished bread.
  • Place one rolled dough circle on a Silpat mat or a piece of parchment paper to prevent sticking. This will be the base of your first stack.
  • Spread a small portion of the cinnamon-sugar filling evenly over the dough circle, followed by a portion of the glazed apples.
  • Layer another piece of rolled dough on top and repeat the filling and apple layers. Continue this process until you have used 11 dough pieces, ensuring the top layer of this stack is finished with both filling and apples.
  • Carefully pick up this stacked creation and gently lay it into the prepared bread pan. Position it so that the bottom layer of dough rests against one end of the pan, ensuring no cinnamon filling directly touches the pan sides.
  • Begin building your second stack of dough, filling, and apples in the same manner. This time, however, ensure the very top piece of dough on this stack does not have any filling or apples on it. This will create a clean top crust.
  • Place this second stack into the bread pan, nestled against the first stack.
  • Allow the assembled bread to rise for approximately 1 hour in a warm place. Alternatively, you can prepare it the night before, cover it, and refrigerate it. If refrigerating overnight, let it rest at room temperature for about 20 minutes before baking to allow it to proof slightly.
  • Preheat your oven to 350°F (175°C). Bake the bread for 30-40 minutes, or until it is thoroughly cooked through and golden brown. To prevent the top from becoming too dark, gently lay a piece of aluminum foil over the bread after about 15 minutes of baking.
  • Once baked, remove the bread from the oven. While still warm, generously pour the prepared maple glaze over the entire loaf. Serve immediately and enjoy the warm, sticky goodness!
  • For the irresistible maple glaze:
  • In a small, microwave-safe bowl, melt the butter.
    2 Tablespoons Butter
  • Add the powdered sugar, maple extract, vanilla extract, and heavy cream (or half and half) to the melted butter.
3/4 Cup Powdered Sugar, 1/2 teaspoon Maple Extract, 1/4 teaspoon Vanilla, 1 Tablespoon Heavy Cream or Half and Half
  • Whisk all the glaze ingredients together until smooth and creamy. If the glaze is too thick, add a tiny bit more heavy cream; if too thin, add a touch more powdered sugar until it reaches a pourable consistency.

Recipe Notes

To store any leftovers, ensure the bread is covered well and kept in the refrigerator. Reheat gently for best enjoyment.
