The Ultimate Chili Recipe

Welcome to the ultimate guide for crafting the best chili recipe you will ever taste! This isn’t just a claim; it’s a promise backed by an unparalleled blend of savory ground beef, crispy bacon, and a trio of hearty beans, all simmered in a perfectly spiced, rich sauce. Adorned with a dollop of cool sour cream and a generous sprinkle of shredded cheese, every spoonful is a journey to flavor paradise.

Many of you have cherished our award-winning Instant Pot chili for its convenience and deliciousness. While that recipe certainly holds a special place, prepare yourself for an experience that transcends. This stove-top masterpiece, painstakingly perfected, truly stands as THE BEST chili recipe in our collection.

A bowl of chili. The chili has ground beef, beans and a rich sauce. It is topped with sour cream and shredded cheese and a piece of cornbread is on the edge of the bowl.

It might come as a surprise, but for a long time, I wasn’t particularly fond of chili. The idea of spicy food wasn’t appealing, and as a child, I wasn’t keen on ground beef or beans, which pretty much ruled out chili from my favorites list. However, a peculiar encounter sparked my curiosity and ultimately transformed my perception of this classic comfort food.

One late evening, just as I was drifting off to sleep, my sister called. Knowing she had just been on a date, I answered, expecting tales of romance. Instead, I was met with an account of epic awkwardness, a story so unique it planted an unexpected seed of culinary intrigue in my mind.

Her date, who had called last minute, asked if she could pick him up. She kindly agreed, assuming his car might be out of commission as college was ending. To her surprise, he revealed he had no car, no job, and wasn’t even enrolled in school. His passion? Pursuing a career in breakdancing.

An Unexpected Culinary Revelation

While everyone needs to follow their dreams, let’s just say his breakdancing demonstration wasn’t exactly electrifying. But I digress. The memorable part came when he confidently declared, “I’m taking you out for the very best thing I’ve ever eaten. You’re going to love it.” After a few turns and straightaways, they arrived at their destination: Wendy’s.

My sister, ever the good sport, gave him a chance. Inside, he proudly ordered two baked potatoes topped with chili. This was his “best thing I’ve ever eaten”? The date, as you might imagine, didn’t progress much further. However, that story sparked an unforeseen ambition within me. What started as a humorous challenge to find the truly best chili ever, a quest to prove that a fast-food chain didn’t hold the crown, blossomed into a genuine love affair with homemade chili. The joke, it seemed, was on me!

Essential Ingredients for the Ultimate Chili

After years of experimenting, I believed I had perfected chili with our Instant Pot chili recipe. But then, I developed this stove-top rendition, and the depth of flavor is truly unmatched. While similar to our beloved Instant Pot version, a few key additions elevate this recipe to absolute perfection. Here’s what you’ll need to create this amazing homemade chili:

Meat Selection for Richness

  • Ground Beef: We recommend 90% lean ground beef for a hearty texture without excessive grease, though 85% lean also works wonderfully. Browning the beef properly is crucial for building a foundational flavor.
  • Bacon: Crispy, savory bacon bits add an incredible layer of smoky, salty goodness. It’s not just a garnish; the rendered fat from the bacon also forms a flavorful base for sautéing the vegetables.

The Hearty Trio of Beans

  • Kidney Beans: These classic chili beans provide a firm texture and absorb the rich flavors of the sauce beautifully.
  • Pinto Beans: Known for their creamy texture when cooked, pinto beans add a subtle earthiness and contribute to the chili’s satisfying body.
  • Black Beans: Offering a slightly different flavor profile and a softer texture, black beans complete our bean trifecta, adding visual appeal and nutritional value.

Flavor-Packed Vegetables

  • Fire Roasted Diced Tomatoes: These aren’t just any tomatoes! The fire-roasting process infuses them with a smoky depth that regular diced tomatoes simply can’t match, elevating the entire dish.
  • Tomato Paste: Concentrated tomato flavor is essential for a rich, robust chili. It deepens the color and intensity of the sauce.
  • Red Onion: Offering a milder, slightly sweeter flavor than yellow onions when cooked, red onions create a nuanced base.
  • Red Bell Pepper: Sweet and vibrant, bell peppers add a fresh, subtle crunch and beautiful color.
  • Jalapeño: For a touch of heat and a fresh, peppery aroma. You can adjust the quantity or remove seeds to control the spice level.
  • Garlic: The aromatic backbone of countless dishes, fresh minced garlic is indispensable for developing a complex flavor.

Liquid Gold and Essential Spices

  • Beef Broth: Provides the liquid base, infusing the chili with even more savory beef flavor as it simmers.
  • Worcestershire Sauce: A secret weapon for umami! This tangy, savory condiment adds a profound depth that makes the chili taste richer and more complex.
  • Spices: A carefully balanced blend of Oregano, Ground Cumin, Kosher Salt, Black Pepper, Smoked Paprika, Coriander, and Chili Powder. Each spice plays a vital role in creating that signature chili flavor, from earthy notes to a subtle smoky warmth.
  • Cocoa Powder: This might sound surprising, but a touch of unsweetened cocoa powder is a game-changer. It doesn’t make the chili taste like chocolate; instead, it enhances the savory notes, deepens the color, and adds an incredible richness and complexity to the sauce. It’s a classic secret ingredient for serious chili cooks.

The precise measurements for each ingredient are detailed in the comprehensive recipe card below, ensuring you have everything you need to create this spectacular ground beef chili.

Two bowls of the best chili. The chili is made with beans, ground beef and herbs and spices. It is topped with sour cream and grated cheese.

Perfect Chili Garnishes

While the chili itself is a star, the right toppings can elevate it even further. These are our favorite chili toppings, but feel free to customize with anything your family loves:

  • Sour Cream: A cool, creamy dollop contrasts beautifully with the warm, rich chili.
  • Cilantro: Freshly chopped cilantro adds a bright, herbaceous note that refreshes the palate.
  • Cheddar Cheese: Shredded cheddar, or your family’s favorite cheese, melts into gooey perfection, adding a salty, tangy counterpoint.

Other fantastic options to consider include crunchy tortilla chips, corn chips, thinly sliced green onions, savory black olives, creamy avocado, fresh corn, diced tomatoes, extra jalapeños for more heat, or even a squeeze of lime juice for brightness.

How to Prepare the Best Chili Recipe

Crafting this incredible homemade chili is surprisingly simple, and the resulting depth of flavor is truly magnificent. I’m absolutely obsessed with how easy and rewarding this recipe is! Here are the fundamental steps to bring this sensational chili to life:

  1. **Render the Bacon:** Begin by cooking the chopped bacon in a large pot or Dutch oven until it’s perfectly crisp. This step not only gives you delicious bacon bits but also renders flavorful fat, which will be the base for your sautéed vegetables. Remove the crispy bacon to a paper-towel-lined plate, reserving the drippings in the pot.
  2. **Sauté Aromatics:** Into the flavorful bacon drippings, add your chopped red onions and red bell pepper. Cook these until they soften and become fragrant, absorbing all the wonderful flavors from the pot.
  3. **Brown the Ground Beef:** Next, add the ground beef to the pot, breaking it up with a spoon as it cooks. Continue to cook until the beef is thoroughly browned, ensuring no pink remains.
  4. **Drain Excess Grease:** Carefully drain any excess grease from the pot. A simple tilt of the pot and a large spoon can do the trick, or use a fine-mesh strainer. This step prevents the chili from becoming overly greasy.
  5. **Combine and Simmer:** Return the pot to the stove. Add all the remaining ingredients, along with three-quarters of the cooked bacon, reserving the rest for garnish. Stir everything thoroughly to combine, ensuring all the spices and liquids are well incorporated.
  6. **Slow Simmer for Flavor:** Bring the chili to a gentle simmer over medium-low heat. The longer this chili simmers, the more the flavors meld and deepen. A minimum of 45 minutes is recommended, but if you have the luxury of time, letting it simmer for several hours or even all day will yield an even more extraordinary result.
  7. **Serve and Garnish:** Ladle the hot, fragrant chili into bowls. Garnish generously with sour cream, shredded cheese, fresh cilantro, and the remaining crispy bacon bits. Don’t forget a side of our perfectly moist skillet cornbread for dipping!

Every intricate detail, including specific ingredient quantities and timings, can be found in the comprehensive recipe card located at the conclusion of this post.

What Ingredients Deepen the Flavor of Chili?

Achieving a truly complex and deeply satisfying flavor in chili requires more than just a mix of spices. We meticulously selected each component of this classic chili recipe, and through extensive testing, we discovered certain ingredients are game-changers. Unsweetened cocoa powder, crispy bacon, and rich tomato paste are paramount to building profound depth. The longer these ingredients are allowed to meld during simmering, the more intense and nuanced the flavor becomes. In fact, this chili tastes even better on the second day, making it perfect for meal prepping!

Does Chili Have To Have Beans?

The debate over beans in chili is as old as chili itself! Some traditionalists, particularly proponents of Texas-style chili, strictly forbid the use of beans, preferring a meat-heavy stew. However, many other chili recipes, including this one, enthusiastically embrace them. I personally adore the heartiness and textural variety that beans contribute to the dish, making it a more substantial and satisfying meal.

The Art of Freezing Chili for Future Enjoyment

Chili is a fantastic meal to prepare in a larger batch and freeze for quick, delicious dinners later. I highly recommend freezing your chili using a food vacuum sealer! This method is superior as it removes all the air, which is the primary culprit behind freezer burn, preserving the chili’s fresh taste and texture. When you’re ready to enjoy it, simply thaw and reheat. I personally use my FoodSaver V4400 and absolutely love how effortless it is to seal bags and swiftly remove the air!

Owning a vacuum sealer is truly a kitchen game-changer! It not only saves me considerable time but also money. It allows me to transform one meal into several future meals, enjoyed even three months later. You can also preserve seasonal produce, keeping summer vegetables as perfectly ripe as if they were just picked. While it might seem like an investment, the long-term benefits and food preservation capabilities make it incredibly worthwhile!

Understanding the Difference Between Red and Yellow Onions in Chili

When selecting onions for your chili, the choice between red and yellow can subtly impact the final flavor profile. A red onion generally possesses a slightly milder flavor compared to a yellow onion, particularly when served raw. In the context of a tomato-based dish like chili, a red onion can help mellow out the acidity and sweetness of the tomatoes, creating a more balanced and harmonious flavor. In contrast, the more bold and pungent yellow or white onions might stand out more prominently.

Delicious Chili Variations to Explore

This easy chili recipe is incredibly versatile, allowing for numerous delicious variations to suit different tastes and dietary preferences. Get creative and make it your own!

  • Protein Swaps: While ground beef is classic, you can easily lighten the dish by using ground turkey or ground chicken. For a dedicated lighter option, try our Instant Pot Turkey Chili. Alternatively, for an extra layer of flavor, swap out half a pound of ground beef for some spicy Italian sausage or a smoky chorizo.
  • Adjusting Spiciness: If you crave more heat, a dash of cayenne pepper or a pinch of red pepper flakes can easily crank up the spice level to your liking. Start with a quarter teaspoon and add more gradually until you reach your desired intensity.
  • Adding More Veggies: Boost the nutritional content and add more texture by tossing in extra vegetables. Green beans, corn kernels (fresh or frozen), diced zucchini, or even butternut squash can be wonderful additions, especially if you’re looking to sneak in more produce for picky eaters.
  • Quantity Adjustments: This recipe is perfect for feeding a crowd! Easily double or even triple the batch to cater to a large gathering. For a fun and interactive serving idea, set up a baked potato bar with various toppings and our chili served alongside perfectly oven-baked potatoes.

Storing Your Delicious Beef Chili

Proper storage is key to enjoying your homemade chili for days to come. This flavorful beef chili will remain fresh for **3-4 days** when stored in an airtight container in the refrigerator. Ensure it cools completely before refrigerating to maintain quality and safety.

Can Chili Be Frozen?

Absolutely! Chili freezes exceptionally well, making it an ideal candidate for meal prep. To freeze, first allow the chili to cool completely. Then, transfer it to freezer-safe containers with tight-fitting lids or, even better, use freezer bags (especially if you have a vacuum sealer). Properly frozen chili will keep its quality for **4-6 months**.

When you’re ready to enjoy your frozen chili, simply let it thaw in the refrigerator overnight. Once thawed, you can reheat it gently on the stove top over medium-low heat, stirring occasionally, or warm individual servings in the microwave until heated through.

So, there’s no need for anyone to settle for fast-food for the “best thing you’ve ever eaten” when you can effortlessly create the truly **best chili recipe** right in your own kitchen. It’s simple to make and tastes absolutely incredible! Now, if you’ll excuse me, I’m off to practice my breakdancing moves and work off that delicious second bowl of chili I just enjoyed!
