  • 2 Cups Cheddar Cheese, grated

Instructions

  1. Heat the oven to 350 degrees F (175 C).
  2. Place the chicken and teriyaki sauce in a baking dish and bake for 30 minutes or until cooked through (internal temperature reaches 165 degrees F or 74 C).
  3. Remove from the oven and shred the chicken.
  4. Reserve a little sauce for the quesadilla assembly.
  5. Heat a nonstick skillet over medium heat and cook both sides of the uncooked tortillas (if using) until lightly golden and pliable.
  6. Set cooked tortillas aside.
  7. Place one tortilla back in the skillet. Sprinkle a little cheese over half of the tortilla, add the shredded chicken, and drizzle with a reserved teriyaki sauce.
  8. Sprinkle a little more cheese over the chicken to prevent the sauce from saturating the tortilla, then fold the other half of the tortilla over the filling (or top with a second tortilla).
  9. Cook on the pan, flipping once, until the cheese is melted and the tortilla is crispy and golden brown on both sides.

Recipe Notes

Teriyaki chicken will keep in the refrigerator for 4-5 days when stored in an airtight container.
