Ingredients

  • 3-4 Slices Bacon, chopped in small pieces
  • 1 Tablespoon Unsalted Butter
  • 1 Tablespoon Olive Oil
  • 1/2 Yellow Onion, diced
  • 2 Carrots, diced
  • 2 Stalks of Celery, diced
  • 1 Head Cauliflower, chopped
  • 2 teaspoons Garlic, minced
  • 1/4 teaspoon Dried Thyme
  • 3 Tablespoons Flour
  • 1/2 Cup Vegetable Broth
  • 3 Cups Low Fat Milk
  • Salt and Pepper to Taste
  • 1 Bay Leaf
  • Grated Cheddar Cheese for Serving, if desired
  • Fresh Parsley for Garnish

Instructions

  • Chop bacon into small pieces and add to a Dutch oven to render out the fat. Once cooked, remove bacon pieces to a paper towel-lined plate with a slotted spoon. Reserve for garnish.
